Abstract

La présente invention concerne des extraits de raisin muscadine possédant des propriétés antioxydantes. Les extraits sont un mélange d'extraits de raisins muscadine blanc et rouge qui augmente de façon inattendue la solubilité de l'acide ellagique dans le mélange. Les extraits obtenus à l'aide d'un solvant sont obtenus selon certains exemples par extraction à l'eau de grignons d'un raisin duquel le jus a été sensiblement éliminé. De plus une augmentation surprenante de la solubilité de l'acide ellagique peut également être obtenue par addition d'une source supplémentaire d'anthocyanines à l'extrait, par exemple par ajout à la composition d'un extrait de raisins muscadine rouges entiers pour lesquels les teneurs importantes de jus n'ont pas été éliminées. D'autres sources supplémentaires d'anthocyanines incluent les myrtilles, les mûres et les framboises ; la source supplémentaire d'anthocyanines peut être obtenue par traitement d'un flux de déchet de fruit pour accroître l'efficacité du procédé de production.
