Description

  

  Mittel zur Behandlung von     Seefischen,    welches nur zum Zweck und nur in solchen  Mengen mit den Fischen zusammengebracht wird, dass der sonst  bei ihrer Zubereitung auftretende üble Geruch beseitigt wird.    Es ist allgemein bekannt,     dass    die     'See-          fische,    trotz ihres hohen Nährwertes und der  verhältnismässig niedrigen     Preislage,        -nicht     bei .der gesamten Bevölkerung als     Nahrungs-          mittel    Anklang finden, da sich bei der Zu  bereitung :

  der Fische (Kochen, Braten,  Backen), insbesondere nach längerem Trans  port oder längerer Einlagerung derselben, ein  übler, für manche     Personen        unerträglicher     Geruch verbreitet, der sich auch noch an der  fertigen Speise bemerkbar macht.

   Das erfin  dungsgemässe     Mittel    zur Behandlung von  Seefischen, welches nur zum Zweck und nur  in solchen Mengen mit den Fischen zusam  mengebracht wird, dass der sonst bei ihrer  Zubereitung auftretende üble Geruch     besei-          tigt    wird, vermeidet ,diesen Nachteil vollkom  men, wobei     gleichzeitig    das eigentliche ge  schmackliche Aroma des     Fisohes    entspre  chend zur Geltung kommt, da es durch den    üblen     Geruch    nicht     übertönt    und zerstört  wird.

   Das Mittel     gemäss    der Erfindung     isst     dabei dadurch     gekennzeichnet,        .dass    es     ein-          gedickte        Obstbestandteile    enthält.

   Auch nur  in geringen Mengen     zugesetzt,        bewirken    die  eingedickten     Obstbestandteile    eine völlige       Geruchlosmaehung,    da die den     Geruch    be  dingenden     Zersetzungsprodukte        von:    ,dem er  findungsgemässen Mittel     absorbiert        und,durch     die im Obst     befindlichen        @Säuren    in nicht  riechende, meist anorganische     Bestandteile          und    Salze umgesetzt werden.

   Zweckmässig  können .dabei die eingedickten     Obstbestand-          teile    in Form von Obstmark, aber auch in  Form von Obstdestillaten und     -konzentraten     zugesetzt werden; es kann     auch    ein aus Obst  gewonnenes Trockenprodukt     verwendet    wer  den.

   Es hat     sichdabei        ergeben,        dass,die        Ge-          riichlosmachung        noch    weiter gesteigert wird,  wenn neben dem     Obstmark    noch Gemüse-           mark    beigegeben wird,     wobei    sich insbeson  dere Tomatenmark als geeignet erwiesen hat.

    Durch das Gemüsemark wird     insbesondere     die absorbierende Wirkung des Obstmarkes       unterstützt.    Die     Gewiehtsverhältnisse    zwi  schen dem aus Obst gewonnenen Mittel und  dem Gemüsemark liegen     zweckmässig    zwi  schen 15 : 1 und 5 : 1. Ausser den     bereits    an  geführten     Substanzen    kann überdies auch  noch eine geringe Menge Zitronensäure zu  gesetzt werden.  



  Zur     Herstellung    des     Mittels    werden ge  reinigte Früchte, wie Birnen, Apfel, Apri  kosen oder dergleichen gekocht, worauf hier  aus das Fruchtfleisch gewonnen wird. Die  sem in der Konsistenz noch     wässerigen          Fruchtfleiseh    wird     fallweise        noch    Gemüse  mark (Tomatenmark) im ungefähren Ver  hältnis 10 Teile     Fruchtfleisch    zu 1 Teil  Gemüsemark zugesetzt.

   Nachdem der so er  haltenen     Misehung    gegebenenfalls noch eine  geringe Menge Zitronensäure     beigegeben     wurde, wird die     Masse    auf einen     Bruchteil     ihres bisherigen Volumens eingedickt. Hier  auf wird das so gewonnene     Produkt    ab  gefüllt und sterilisiert.     Es        kann    aber     das    ein  gedickte Fruchtfleisch (Obstmark) mit glei  chem Erfolg auch allein verwendet wer  den,     desgleichen    auch ein     Destillat    oder  Trockenprodukt.  



  Von dem erfindungsgemässen     Mittel    wird  vor Beginn :der Zubereitung     des        Fisches    eine       entsprechende    Menge in dem beim     Backen     und Braten meist     verwendeten    noch kalten       0l    - beim Kochen in dem hierbei verwen  deten noch kalten Wasser - verrührt.

   Nach  dem das so behandelte 01,     beziehungsweise     Wasser, die Siedetemperatur erreicht hat, er  folgt die Einbringung und Zubereitung des  Fisches in der allgemein üblichen     Weise.     Hierbei ist Bedacht zu nehmen, dass das 01,  beziehungsweise das Wasser, die in der  Pfanne liegenden     Fischteile    bedeckt und       während.    des Zubereitungsprozesses nicht aus  der Pfanne spritzt.

   Das Mittel kann auch in  dem zum Panieren     verwendeten,    mit etwas  Wasser     verdünnten    Ei gut verrührt werden,  worauf der     gewaschene    und gut     gesalzene            Fisch    wie üblich in Mehl, Ei und Brösel  paniert und in gutem     Speiseöl    schwimmend  gebacken wird.

   Auch beim Braten kann das       Mittel,    statt, wie oben     geschildert,    in das  kalte Öl eingebracht zu werden, mit glei  chem Erfolg in etwas Wasser verrührt wer  den, worauf der Fisch durch     diese    Lösung  durchgezogen, sodann nach     Bedarf    in Mehl  und Brösel gedreht und in gutem     '.Speiseöl     rasch     gebraten        wird.    Beim Kochen wird     das          Mittel    in der Weise verwendet, dass     dasselbe     in das noch     kalte        Kochwasser    eingerührt oder  aber,

   in einem     Leinensäckchen        eingenäht,          mitgekocht    wird.  



  Bei der Verwendung des     erfindungs-          gemässen    Mittels ist von dem bekannten  üblen     Fisehgerueh    nicht mehr     das    Geringste  zu bemerken, während     das    Aroma. und der       Geschmack        verbessert    sind.

   The composition according to the invention is characterized in that it contains thickened fruit components.

   Even if only added in small amounts, the thickened fruit components cause a complete odorless mowing, since the odor-causing decomposition products are absorbed by the agent according to the invention and converted into non-odorous, mostly inorganic components and salts by the acids in the fruit .

   The thickened fruit components can expediently be added in the form of fruit pulp, but also in the form of fruit distillates and concentrates; a dry product obtained from fruit can also be used.

   It has been found that the odor removal is increased even further if vegetable pulp is added in addition to the fruit pulp, and tomato pulp in particular has proven to be suitable.

    In particular, the vegetable pulp supports the absorbent effect of the fruit pulp. The weight ratios between the remedy obtained from fruit and the vegetable pulp are expediently between 15: 1 and 5: 1. In addition to the substances already listed, a small amount of citric acid can also be added.



  To produce the agent, cleaned fruits such as pears, apples, apricots or the like are boiled, whereupon the pulp is obtained from here. This pulp, which is still watery in consistency, is occasionally added with vegetable pulp (tomato paste) in an approximate ratio of 10 parts pulp to 1 part vegetable pulp.

   After a small amount of citric acid has been added to the mixture obtained in this way, the mass is thickened to a fraction of its previous volume.   Before the start of the preparation of the fish, a corresponding amount of the agent according to the invention is stirred into the still cold oil usually used for baking and roasting - when cooking in the still cold water used here.

   After the oil or water treated in this way has reached the boiling point, the fish is introduced and prepared in the generally customary manner. It is important to ensure that the oil, or the water, covers the pieces of fish in the pan and during. does not splash out of the pan during the preparation process.

   The agent can also be stirred well in the egg used for breading, diluted with a little water, after which the washed and well-salted fish is breaded as usual in flour, egg and breadcrumbs and baked in good cooking oil.
