Les procédés actuellement utilisés pour la pasteurisation ou la stérilisation par la chaleur du lait et autres liquides, dans lesquels le chauffage du liquide est réalisé par simple échange de température par contact avec une circulation d'eau chaude ou de vapeur, exigent une installation importante de chau dières; l'ensemble a un rendement thermique faible; la répartition de la température est défectueuse et le contrôle ainsi que le réglage de l'opération sont difficiles à réaliser.
L'invention a pour objet un nouveau pro cédé de pasteurisation des liquides tels -que le lait, les jus de fruits, etc., qui supprime ces inconvénients et qui est remarquable no tamment en ce que le chauffage est obtenu par exposition du liquide dans une enceinte hermétiquement close, sous forme d'une mince pellicule en mouvement, au rayonne ment direct de sources émettrices de radia tions particulièrement riches en rayons infra rouges.
En outre, il arrive fréquemment qu'au ours du traitement des corps gras ou sirü- peux, on soit conduit à éliminer des odeurs ou vapeurs nuisibles; on est alors amené à effec tuer la réfrigération par ruissellement à l'air libre, ce qui convient particulièrement bien au dégagement des vapeurs.
Mais ces appareils présentent un sérieux inconvénient de réensemencement, car les poussières et les germes environnants se dé posent sur la couche réfrigérée du liquide, de sorte que l'on risque une nouvelle contamina tion, qui détruit partiellement l'effet de la pasteurisation qui vient d'être effectuée.
Le procédé suivant l'invention est de pré férence exécuté de manière à éviter cet in convénient, en faisant refroidir le liquide pas teurisé dans une chambre close dans laquelle on maintient par aspiration ou autre une pression inférieure à la pression atmosphé rique; ce qui a pour résultat d'activer le déga gement des produits gazeux tout en suppri mant les risques de contamination.
L'invention concerne également un appa reil pour la mise en oeuvre de ce procédé, re marquable notamment en ce qu'il comporte, à l'intérieur d'une enceinte calorifugée, une paroi cylindrique le long de laquelle le liquide à traiter s'écoule par gravité sous la forme d'une pellicule à partir d'un distribu teur disposé dans le voisinage de-la partie supérieure de ladite paroi, celle-ci et le distri buteur subissant un mouvement relatif pour assurer le mouillage convenable de la paroi, et l'évacuation du liquide traité se faisant à la partie inférieure de l'enceinte.
Le dessin annexé, donné uniquement à titre d'exemple, représente une coupe ver ticale schématique d'un mode de réalisation de l'appareil suivant l'invention.
Suivant l'exemple représenté, l'appareil comporte une partie supérieure P ou enceinte de pasteurisation et une partie inférieure R contenant un réfrigérateur.
Le liquide est introduit à partir d'un ré gulateur à flotteur 80 dans un canal annu laire ouvert 81, situé à la partie supérieure du. pasteurisateur P fermé en haut par un couvercle P' et en bas par un fond conique P2. Cette rigole 81 est solidaire d'un plateau 81a fixé sur un axe 82 entraîné en rotation uniforme à l'aide d'un moteur 83.
L'arbre 82 porte également un dispositif de chauffage constitué par un faisceau de lampes 84 à rayons infrarouges. Le courant est amené aux lampes à l'aide de balais fixes 85 traversant le couvercle P' et de bagues collectrices tournantes 81b figées sur le pla teau 81a.
La rigole annulaire rotative 81 est per cée dans sa partie externe de petits trous 86 régulièrement espacés, par lesquels le liquide gicle sur une paroi cylindrique de ruisselle ment 87 en assurant un arrosage de toute la surface de celle-ci grâce au mouvement de rotation de la rigole. La paroi 87 est fixée à l'intérieur de l'enveloppe P du pasteurisateur et pourvue extérieurement d'un. revêtement calorifuge 87a.
Après son passage dans le pasteurisateur P, le liquide pasteurisé et chaud se rassem ble dans un canal annulaire 90 prévu à la partie inférieure du pasteurisateur et dans lequel plonge un rebord annulaire vertical du fond conique P2. Ce dispositif forme un joint hydraulique isolant hermétiquement le pas- teurisateur P du réfrigérateur R.
La température du liquide dans le pasteu- risateur P est réglée par un thermostat 95 (par exemple à tension de vapeur) agissant par l'intermédiaire d'un pointeau 96 sur le débit du fluide arrivant du régulateur à flot teur 80, qui limite la hauteur du liquide en charge devant s'écouler dans la rigole 81.
Le liquide s'écoulant du canal annulaire 90 tombe dans la chambre de réfrigération R, en ruisselant sur une surface de ruissellement 98 constituée par un solide de révolution dont la génératrice comporte une série d'ondula tions à pas constant.
Cette surface ondulée 98 est enfilée et soudée sur un cylindre intérieur 100, de façon à. constituer avec lui une série de canaux cir culaires, reliés les uns aux autres par des coudes 101, en quinconce le long de deux gé nératrices diamétralement opposées.
Le liquide frigorifique rentre par le bas par une tubulure 102 pour sortir par le haut après avoir parcouru en zigzag les canaux du réfrigérateur.
Le liquide pasteurisé à refroidir ruisse lant par gravité le long de la paroi ondulée 98, le refroidissement se fait à contre- courant.
Quand ce liquide a atteint le fond 105 de la chambre, il est évacué à travers un canal annulaire 106 agencé d'une façon analogue au canal annulaire 90, de façon à former un joint hydraulique étanche.
