Description

  

  Procédé de préparation d'un extrait soluble de café.    Divers procédés ont déjà été proposés en  vue de l'obtention, à partir de café en grains,  de produits solides solubles dans l'eau chaude  ou dans l'eau froide. Il est     toutefois    difficile  d'obtenir un     ,produit    entièrement soluble, con  servant le goût naturel du café et les autres  qualités qui en font un breuvage.  



  La présente invention, qui permet     d'éea.r-          ter    cette difficulté, a pour objet un procédé  (le préparation d'un extrait,     soluble    de café.  



  Ce procédé est caractérisé en ce que l'on  soumet une bouillie aqueuse de café grillé et  moulu à une évaporation par chauffage à une  température inférieure à 100  C et sous une       pression    inférieure à. 76 cm de Hg, en ce que  l'on condense les vapeurs     ainsi        dégagées        jus-          q   <B>'à</B> obtention d'un poids de liquide égal<B>à</B>  u n  la moitié environ du     poids    de café mis en       ouvre,    en ce que l'on soumet ensuite le reste  (le la bouillie à une extraction paf de l'eau  à une température comprise entre 90 et 95  C,  et en quantité à.

   peu près égale au ,poids du  café mis en ouvre, puis en ce que l'on réunit  une partie au     moins    du     condensat    avec une  partie au moins de l'extrait.  



  Grâce au procédé de l'invention, on peut  parvenir, après dessiccation du condense et. de  l'extrait réunis, à obtenir un produit. solide  (lui est. entièrement. soluble dans l'eau et ren  ferme, fixés et stabilisés, tous les     constituants     contenus à     l'origine    dans le café, notamment  les matières grasses, la caféine, l'acide     ca        é-          tannique    et. les essences     aromatiques.       Pour l'exécution de ce procédé, certaines       précautions    sont recommandables dans la pré  paration de la bouillie aqueuse     .constituant        -la     matière première.

   En premier lieu, il y a inté  rêt à opérer très lentement le     grillage    du café  vert pour éviter toute caramélisation des hy  drates de carbone; on peut ensuite enrober le  café, selon     les    méthodes connues, pour y main  tenir les essences aromatiques si la mouture  ne doit pas suivre immédiatement le grillage.  



  On soumet ensuite le café à une mouture,  puis on le met en bouillie aqueuse, par exem  ple par pétrissage avec de l'eau, de préfé  rence à une température de     -10    à 50" pendant  environ une heure; la quantité d'eau à uti  liser est de préférence d'environ trois     parties     en poids pour une de café.  



  On effectue l'évaporation de cette bouil  lie aqueuse, de ,préférence sans     rétrogradation,     à. une     température    n'excédant. par 42" C et  sous une pression d'environ 70 cm de mer  cure, afin     d'éviter    une oxydation et une réac  tion des diverses essences aromatiques entre  elles. On recueille .le     distillat    depuis le début  du     passage    :des vapeurs jusqu'à obtention d'en  viron 0,5     partie    de liquide pour 1 partie de  café employée.  



  Pour l'extraction par l'eau de la bouillie  restant dans la. cucurbite de l'appareil à dis  tiller, on opère, de préférence, dans     une    batte  rie d'extracteurs de la façon suivante: Sup  posons tous les extracteurs, sauf un, pleins de  bouillie de café à des     stades    différents d'épui-      serrent;

   l'extracteur     vide    est. rempli de bouillie  provenant directement de l'appareil de     distil-          lation,    on fait passer de l'eau entre 90 et  95  C de haut. en bas dans les extracteurs déjà       remplis,    en débutant :dans .celui dont le con  tenu est le plus épuisé pour finir vers le plus       riche;    le     jus    obtenu qui s'est enrichi progres  sivement est amené en bas -de l'extracteur qui  vient d'être rempli et     eireule    de bas en haut  dans ce dernier. On peut ainsi réchauffer le       jets    avant. son passage dans l'extracteur et  chasser l'air que contient cet extracteur.

   On  recueille ainsi, à la     sortie,    une certaine quan  tité de     jets    qui contient environ 40     g    de ma  tière sèche par litre. Il     est    évident que, dans  cette opération, la même quantité de jus tra  verse tous les extracteurs. L'extracteur conte  nant le marc le plus épuisé est alors vidé et  rempli à. nouveau de bouillie franche. Dans  l'ordre de passage du     jets,    cet extracteur passe  du premier au dernier rang, tandis que l'ex  tracteur rempli précédemment. passe du der  nier rang à l'avant dernier.

   On réalise en  somme une extraction à     contre-coui        ant,    avec  cette particularité que le     sens    de     passage    dans  le dernier extracteur est. inversé. Les souti  rages de tous les extracteurs     successivement     sont-dirigés par une même canalisation prin  cipale vers un bac jaugeur.

   L'extrait     obtenu     a, en moyenne, la composition     suivante:       Extrait, sec, 30 à 40     g    par litre  Cendres 0,3 à 0,4     g    par litre  Caféine 0,005 à. 0,010     g    par litre    On peut ensuite concentrer cet extrait  aqueux     jusqu'à    l'obtention d'un sirop à 45 0/0  de matières sèches et achever la dessiccation  à l'abri de l'air, par exemple     dans    une atmo  sphère d'azote sous pression réduite.  



  Pour obtenir un extrait. soluble de café, on  mélange au     prodiüt    solide provenant de cette  dernière     dessiccation    :le     distillat    obtenu       préalablement,        puis    on achève la dessiccation  à l'abri de l'oxygène et à basse température  jusqu'au produit sec définitif.  



  Pour la ,préparation d'un extrait de café  soluble,     i1    est préférable, pour stabiliser et  fixer la caféine, l'acide     eafétannique    et les    huiles essentielles, d'ajouter, en faible     propor-          tion,        par        exemple    5     %        par        rapport    à     l'extrait     sec, de .la poudre de     lait.,    du sucre ou un de  ses     dérivés    hydrolysés solubles dans l'eau, tels  que glucose, dextrose, maltose, avant l'étape       1de    dessiccation définitive,

   de manière que  l'action réductrice .de     ces    sucres intervienne  pour la protection des aromates du café contre  l'effet préjudiciable de     la        :chaleur    lors de la       dessiccation.     



  Un résultat analogue peut s'obtenir en  ajoutant au café des produits d'hydrolyse de       matières    amylacées telles que la fécule, l'ami  don, etc. Dans ce cas, on soumet. séparément  ces hydrates de carbone à. une     hydrolyse        soit     par voie     diastasiqite,    soit .par voie chimique  (ébullition en milieu acide dilué), afin de  les saccharifier     (transformation    en     glucose,     dextrose ou     maltose)

  .    On concentre alors le  jus sucré jusqu'à l'obtention d'un sirop     càn-          tena.nt        environ        45        %        de        matières        sèches.        On     peut ensuite mélanger ce sirop et celui qui a  été obtenu par extraction aqueuse de la     bouil-          lie    de café     désa.roniatisée    par distillation et  sécher le mélange comme il a été dit. précé  demment.

      Le séchage définitif du mélange d'extrait  solide et du distillat     sucré    s'effectue à. la tem  pérature de 65  C     maximum,    dans une atmo  sphère inerte sous une     légère        dépression    de  l'ordre d'une     vingtaine    de     centimètres    d'eau.

Aromatic essences In carrying out this process, certain precautions are advisable in the preparation of the aqueous slurry constituting the raw material.

   In the first place, there is an advantage in roasting the green coffee very slowly to avoid any caramelization of the carbohydrates; it is then possible to coat the coffee, according to known methods, to hold the aromatic essences therein if the grinding is not to immediately follow the roasting.



  The coffee is then subjected to grinding and then put into an aqueous slurry, for example by kneading with water, preferably at a temperature of -10 to 50 "for about an hour; to be used is preferably about three parts by weight to one part of coffee.



  This aqueous broth is evaporated, preferably without retrogradation, at. a temperature not exceeding. at 42 "C and under a pressure of about 70 cm of curing sea, in order to avoid an oxidation and a reaction of the various aromatic essences between them. The distillate is collected from the beginning of the passage: from the vapors to obtaining about 0.5 part of liquid for 1 part of coffee used.



  For the water extraction of the slurry remaining in the. cucurbite of the distiller, one operates, preferably, in a battery of extractors as follows: Remove all the extractors, except one, full of coffee porridge at different stages of exhaustion ;

  For the preparation of a soluble coffee extract, it is preferable, for stabilizing and fixing caffeine, eafetannic acid and essential oils, to add, in small proportion, for example 5% relative to the 'dry extract, milk powder, sugar or one of its hydrolyzed derivatives soluble in water, such as glucose, dextrose, maltose, before step 1 of final drying,

   so that the reducing action .de these sugars intervenes for the protection of the aromatics of the coffee against the detrimental effect of the heat during desiccation.



  A similar result can be obtained by adding to coffee products of hydrolysis of starchy materials such as starch, friend, etc. In this case, we submit. separately these carbohydrates to. hydrolysis either by diastasis or chemically (boiling in a dilute acid medium), in order to saccharify them (transformation into glucose, dextrose or maltose)

      The final drying of the mixture of solid extract and the sweet distillate is carried out at. the temperature of 65 C maximum, in an inert atmosphere under a slight depression of about twenty centimeters of water.
