Description

Food dough rolling machine Rolling dough for making flutes, butter slides, etc., is done by hand, which requires a lot of work and time. The subject of the invention is a machine for rolling the food dough which makes it possible to perform this work quickly and automatically while ensuring a regular shape of the cylindrical dough pieces leaving the machine.

The food dough rolling machine which is the subject of the invention comprises a feeding and cutting device, which delivers parallelepiped dough pieces on a rolling device and a conveyor for the evacuation of the rolled dough pieces.

This machine is characterized by the fact that the rolling device comprises a horizontal rotating cylinder arranged opposite a fixed curved plate, the upper longitudinal edge of which is more distant from the surface of the cylinder than the lower longitudinal edge, the position of which is this plate being adjustable horizontally and vertically.

The appended drawing shows, by way of example, one embodiment of the object of the invention.

Fig. 1 shows a side elevational view thereof and FIG. 2 a plan view.

A represents a dough supply device of known type, comprising a funnel 1 into which the dough to be worked is introduced and which communicates with a cylindrical chamber 2 in which an Archimedean screw 3 rotates, driven in rotation by a motor (not shown) via a belt 4, and a pulley 5 integral with the shaft of the Archimedean screw. The latter drives the dough and delivers it between the rollers 6 of a chamber 7, having a rectangular opening 8 for the exit of the dough.

The outer wall of the chamber 7 is provided with two guides 9, between which can slide a rectangular knife 10 of a cutting device B, of also known type. This device comprises a support 11 fixed to the upper part of the chamber 7, carrying a shaft 12, a pulley 13 and a cam 14 integral with the shaft 12. The pulley 13 is rotated by a motor (not siné) via a 13 'belt.

At the end of the shaft 12 is hooked one of the ends of a coil spring 15, the other end of which is hooked to a finger integral with the knife 10. The spring 15 tends to lift the knife. 10, thus releasing the opening 8 through which the dough comes out. The cam 14 on the other hand, cooperating with a curvature of the upper part of the knife pushes the knife downwards with each of its rotations, cutting the dough and temporarily closing the outlet opening 8.

The rolling device comprises a rotary cylinder 16 having ribs 17 in the form of chevrons, driven in rotation by a shaft 18 actuated by a motor with speed reducer (not shown). Opposite the cylinder 16, and parallel to the latter, is arranged a curved rectangular plate 19, the inner surface of which defines with the outer surface of the cylinder 16 a space which decreases from the upper edge to the lower edge of the cylinder. plate.

The curvature of the plate 19 may be, for example, an arc of a circle, the center of which is eccentric with respect to the center of the periphery of the cylinder.

The plate 19 is fixed to a part 20 having at one of its ends a curved widening 21 in which the outer surface of the plate 19 is applied, the other end or tail, of parallelepiped shape, laterally exhibiting on faces projecting 22 extending in the direction of the height. The tail of part 20 can slide with gentle friction between the branches of a U-shaped part 23 and strips of rectangular section 25 screwed onto the branches of part 23. The lower part of part 23 in the form of a U-shaped part. U is fixed on a slider 24.

The tail of the part 20 is pierced with a hole, in which can slide with gentle friction a rod 26 having at its lower end a shoulder 27 and threaded at its upper end. The threaded part of the rod 26 is screwed into a threaded hole 28 of a rectangular plate 29 screwed onto the upper part of the part 23. The index 30 represents a lock nut and the index 31 a handwheel threaded on. the upper end of rod 26 and pinned to it.

The slide 24 has bevelled longitudinal edges and can slide in a dovetail slide of a second slide in the carriage 32. The slide 24 also has a slot 33 traversed by a screw 34 screwed into the carriage 32, making it possible to block the slide 24 on the carriage 32. At the end of the slide 24 is fixed a rectangular stop 35. At the end of the carriage 32 is fixed a rectangular part 36 having a tapped hole in which is screwed a bolt 37 which can be locked by a locknut 38. The carriage 32 can in turn slide in slides 39 integral with the base 40 and has locking means (not shown) on the latter.

The supports for the bearings of the shaft 18 (not shown) are also attached to and integral with the base 40.

The operation of the machine is as follows. The feeding A and cutting devices B, working in synchronism, are adjusted to deliver, for example, six parallelepipedal dough pieces 41 for each revolution of the cylinder 16. These dough pieces are driven by the cylinder into the space between this and the fixed plate 19. As a result of the gradual narrowing of this space, the dough pieces are rolled on the inner surface of the plate 19 and become thinner in diameter, while at the same time the rafters roll out the dough from the middle. from the cylinder to the edges thereof.

Arrived at the bottom of the plate 19, the dough pieces fall on a conveyor belt C, in the form of perfectly cylindrical sticks. The diameter of these dough sticks is determined by the free space between the rotating cylinder 16 and the fixed plate 19, and the way this space decreases from the top to the bottom of the plate. The eccentricity of the plate relative to the cylinder can be adjusted as follows. To bring the plate 19 closer to the cylinder, for example, it suffices to release the screw 34 and unscrew the lock nut 38 a little, then screw the bolt 37 into its support 36.

The end of the bolt pushes the stopper 35 and hence the slider 24 in the direction of its advance. Then the slide 24 is blocked on the carriage 32 by means of the screw 34, and the bolt 37 against its support by means of the lock nut 38. To adjust the height of the plate 19, it suffices to slightly unscrew the locknut 30, to tighten or unscrew the screw 26 by means of the handwheel 31, which has the effect of lowering or raising the shoulder 27 and consequently the plate support 20.

Having adjusted the height of the plate, it suffices to block the screw 26 by tightening the lock nut 30 on the plate 29. To clean the plate or to change the plate, it is sufficient to release the carriage 32 from the base. , and to slide it in the slides 39 away from the cylinder until there is sufficient space to proceed with cleaning or changing the plate. Then the carriage 32 is returned to its original position and it is blocked on the base.

It is obvious that one could provide a smooth rotating cylinder, while the inner surface of the fixed curved plate would be lined with chevron-shaped ribs. In this case, ribs can even be provided, the relief of which decreases in height as they move away from the upper longitudinal edge of the plate, the lower part of the latter being smooth.

It is also possible to provide ribs in the form of chevrons on the cylinder and on the interior surface of the plate, the chevrons of the latter possibly being arranged in the opposite direction to those of the cylinder.
