Back- und Bratvorrichtung.
Baking and roasting device. The subject matter of the present invention is a baking and roasting device with a saucer and a crockery with a lid, which is used to hold food and is resting on the saucer, into which the heating gases have access. The device be seated according to the invention vent openings for the hot gases. Means can be seen before to completely or partially close these exhaust openings in order to regulate the heating of the food in the dishes.
The subject matter of the invention is illustrated in FIGS. 1, 2 and 3 in exemplary embodiments. a is a subset with a central pipe or riser pipe b for the heating gases, c is a ring-shaped baking and roasting utensil with a protruding edge g that holds a cover d . The edge g of the roasting utensil (left half in Fig. 1) is provided with a series of holes i, which exactly with. correspond to the row of holes i 'in the edge of the cover plate. By turning the lid, the two rows of holes are covered. respectively the baking dishes completed.
The inner baking pan wall h does not close tightly. to the central tube b to prevent the food from sticking. The space v formed in this way can also be used for the discharge of the gases and vapors (right half in FIG. 2). For this purpose, the perforated intermediate ring e, which lies in the hollow u of the base a and with its row of holes o downwards; turned around. and brought from the position of FIG. 1 to that of FIG. 2, whereby the row of holes o comes up and at the same time the baking utensil is slightly lifted from the saucer.
In this position, the hot gases and vapors between the saucer and baking utensils can get to the outside (Fig. 2). At the same time, the intermediate ring e serves to center the baking utensils c on the base a. The indentation of the pedestal a, respectively. the hollow of the same has the purpose that the roasting utensil sits only on the raised part m of the edge to prevent burning. to prevent the food as possible.
An embodiment as a cake and roasting pan is shown in FIG. The baking and roasting pan only rests on the edge n of the base a . To extract the gases and vapors, several extraction openings i are provided in the cover (Fig. 3 left half). However, the gases can also be withdrawn to the outside through the space v s and through the hole grater f in the pedestal (Fig. 3 right half).
A baffle plate p serves to effectively distribute the heat to the outermost edge of the device and at the same time to isolate the area of the cover that is most heavily used by the heating gases, respectively. to reduce the heat radiation as much as possible.
The operation of the device is such that the heating gases, the baking and roasting dishes, bez - ,. v. be able to spread the contents evenly on all sides without causing the food to burn, as the effect of jet flames is eliminated.
Through the central opening in the roasting and baking utensils, most of the heat, as indicated by the arrow in Fig. 1, is directed upwards and deflected from the cover on the contents, so that baking and roasting the contents made light without any further facilities becomes. Of particular advantage is the rotatable lid d and the intermediate ring e for used heating gases and vapors. Depending on how the gases are extracted, the heat distribution can also be regulated.
If the vapors are diverted from under the baking utensils (Fig. 2), the heat source is used very economically due to the resulting running of the same, and overheating of the areas threatened by flashes is excluded, because the vapors drawn off produce a temperature equalization , which acts a uniform heat distribution on the whole device be.
The embodiment of Fig. 3 has the part before. that thanks to the design of the base and the resulting wide space s a very even distribution of the heat on the floor and. Upper part of the device is possible, despite the wide shape of the same. In the embodiment of FIG. 3, the vapors emerge from the bottom right half through the row of holes f.
The production of the baking and roasting device described is. primarily made of metal. But it can also be made of other material, e.g. B. refractory clay, be made.
Instead of introducing the heating gases into the middle of the baking utensil, they can also enter the outside of the baking utensil, with the gases in the middle of the baking utensils, for example through adjustable openings in the lid. can escape.
