Abstract

Procedimiento para el tratamiento de un cultivo de vid, que consiste en introducir una levadura activa de uso enológico con un contenido de agua residual de al menos un 40% en una cámara de presurización, en cuyo interior se fuerza un fluido a una presión de lisis superior a 1000 bar para someter la levadura activa a dicha presión de lisis con la consiguiente ruptura de la estructura molecular de la levadura y la obtención de una levadura inactiva o su derivado que contiene una fracción libre de aminoácidos extraídos del citosol de la propia levadura. A continuación se produce la despresurización de la cámara de presurización y se extrae la levadura inactiva o su derivado de la misma cámara de presurización. Además, el método implica disolver la levadura inactiva o su derivado en un disolvente para obtener una solución de tratamiento, distribuir la solución de tratamiento en al menos una planta de vid del cultivo de vid, y permitir que la planta de vid absorba la fracción libre de aminoácidos extraídos del citosol.
