随着人们生活水平的不断提高,人们对于饮食的多样化、精品化、营养化的追求也不断提升。中秋节是我国传统的佳节,每当中秋节人们就会赏月,吃月饼。亲戚朋友之间也会送上月饼,祈求团团圆圆。月饼的种类有很多,全国各地都有不同的做法。冰皮月饼。它制作简单,它口感清爽,它外形时尚,最重要的,它低油低糖,健康。冰皮月饼独到之处,在于一个‘冰’字,它给你爽口之感,调节被传统月饼油腻住的肠胃。冰皮月饼的皮是由糯米粉等多种粉类材料加少量的糖油制成,可长时间不裂开,不老化,且无生粉味道。传统广式月饼多是用口味重的馅料,比如蛋黄,五仁等,而与冰皮月饼搭配更好的则是果味等清淡馅料。它不用经过烘烤,口感更为清爽,而且做起来更加方便。然而冰皮月饼最大的特色莫过于它冷藏后更加美味的口感,于是也更加体现了‘冰皮’二字带给我们的享受。冰皮月饼的保存是非常有讲究的,常温下制作完毕后,不要急于食用,先冷藏几小时再说。若是一时吃不着,最好的储存办法则是直接冷冻。吃前半小时拿至冷藏室,才可获得最佳口感。

本发明的目的是提供一种冰皮枣泥松仁月饼的制作方法。
本发明涉及一种冰皮枣泥松仁月饼的制作方法,其特征在于包含以下步骤:
1)准备饼皮材料:糯米粉60g、粘米粉40g、澄面30g、糖粉40g、紫苋菜汁160g、玉米油20g、糕粉适量(做手粉用、防粘,糯米粉放锅中炒熟即成),除糖粉外所有材料混合入炒锅中小火翻炒至微黄,可以稍捻起一点尝一下没有生粉味即可,取出入容器中,加入糖粉,倒入油,倒入热的紫苋菜汁,一边倒一边用筷子搅拌均匀,晾至不烫手时彻底揉匀成团静置10分钟;

月饼营养丰富,具体如下:月饼内馅多采用植物性原料种子,如核桃仁,杏仁,芝麻,瓜子,山楂、莲蓉,红小豆,枣泥等,对人体有一定的保健作用。植物性的种子含不饱和脂肪酸高,以油酸、亚油酸居多,对软化血管防止动脉硬化有益;含矿物质,有利于提高免疫力,预防儿童锌缺乏、缺铁贫血;莲子、红小豆、芝麻含钾很高,置换细胞内钠盐排出,营养心肌、调节血压;从中医角度看,一些原料性温平居多,强心、镇静、安神,一些种子富含维生素E,抗衰老,滋皮肤、乌须发。不过,月饼油多、糖多、以鸭蛋黄为馅的月饼胆固醇高,总体讲是高热量食品,糖尿病患者、肥胖者不宜多吃。
