背景技术
近年来,我国果汁饮料市场呈高速发展态势,果汁市场的迅速崛起与消费者的健康意识增强密不可分,果汁饮料,尤其是纯果汁里富含身体必需的维生素和微量元素,也因此,健康美味成为果汁吸引消费者的主因。
发明内容
1、工艺流程:白菜、水果鲜果→挑选分级→取果肉→破碎→去除果皮→果汁分离→过滤→调配→均质→脱气→杀菌→快速冷却→装灌→成品。2、配方:白菜水果原汁10%;砂糖9%;柠檬酸0.25%;稳定剂0.05%;白菜水果香精:适量。3、操作要点:(1)果肉提取方法:方法一:将白菜、水果切半,用勺匙舀出用作制取果汁白菜、水果果肉;方法二:用一组旋转刀片将白菜、水果果实切片(1.6mm厚)直接掉到一个多孔的离心转筒里,转筒有钭边,在钭边的垂直方向上有4块缓冲板,当离心机以175克离心力的速度旋转时,从果片中出来的果浆和种子通过悬框孔被抛出,剩余果皮附着在悬框的壁上被抛到另一边,然后在分离槽中收集果浆和果皮。提取器的生产能力为2t/h,其提取率为94%。(2)分离过滤:可用离心机离心去除种子和粗纤维;(3)调配:白菜水果由于独特的风味和高酸度,已被当成一种天然的浓缩物。果汁饮料中白菜水果汁占6-8%就味美可口。(4)均质和脱气:(5)杀菌:采用巴氏杀菌:105ºC,15-20min;(6)冷却:杀菌后迅速冷却至85ºC。4、成品要求:(1)成品果汁为深黄色并混浊均匀,不分层;(2)具有浓郁的白菜水果果汁香味,不加柠檬酸就酸甜可口。具体实施方式
