Je známe, že obilné liehoviny aromatického typu, celosvětově označované ako whisky, je nutné vyrábať z obilných destilátov, podrobených zušlachťovaciemu procesu. Pod pojmom zušlechťovací proces sa rozumie, podobné ako pri vínnom destiláte, dlhodobé skladovanie vhodného obilného destilátu v maloobjemových dubových sudoch, spravidla o obsahu maximálně 300 1, pričom tu destilát postupné získává vyššiu typickú aromatičnosť. Potřebná doba skladovania sa spravidla pohybuje od 3 rokov až do 6 až 8 rokov, a potom celý skladovací proces zapříčiňuje značné straty destilátu výparom cez drevenú hmotu skladovacích sudov.
