Vynález sa týká sposobu výroby sušeného strúhaného soleného syrá, ktorý vzniká prirodzeným sušením tvrdého tvarohu. However, the hard curd obtained in this way, by its low dry matter content, does not allow further mechanical processing for direct consumption, in particular by shearing. In the case of high temperature heating to increase the dry matter content, it is partially degraded and the characteristic flavor and aroma are lost. When increasing the dry matter content of the mechanical process, especially in high-speed centrifuges and high-pressure presses, the flake structure is broken, which results in an increased proportion of dust particles in the material during finishing. In addition, the technology itself is highly energy-intensive, which results in high-temperature scaling, the use of whey energy equipment and, last but not least, the increase in dry matter content by the hot air route.
