Claims (15)
1. Lactobacillus paracasei-stamme, som er valgt fra gruppen bestående af Lactobacillus paracasei-stammen CHCC14676, som blev deponeret hos German Collection of Microorganisms and Cell Cultures (DSMZ) under deponeringsnummer DSM25612, og mutantstammer afledt deraf, hvor mutantstammerne har i det væsentlige de samme eller forbedrede antifungale egenskaber i forhold til den stamme, der er deponeret under deponeringsnummer DSM25612.
2. Antifungalt præparat, som omfatter mindst én Lactobacillus paracasei-stamme ifølge krav 1.
3. Antifungalt præparat ifølge krav 2, som desuden omfatter mindst én stamme af Lactobacillus rhamnosus.
4. Antifungalt præparat ifølge krav 3, hvor den mindst ene stamme af Lactobacillus rhamnosus er valgt fra gruppen bestående af Lactobacillus rhamnosus CHCC12697 med deponeringsnummer DSM24616, Lactobacillus rhamnosus CHCC14226 med deponeringsnummer DSM24652, Lactobacillus rhamnosus CHCC5366 med deponeringsnummer DSM23035 og mutantstammer afledt deraf, hvor mutantstammerne har i det væsentlige de samme eller forbedrede antifungale egenskaber i forhold til én af de stammer, der er deponeret under deponeringsnummer DSM24616, DSM24652 eller DSM23035.
5. Fødevareprodukt, foderprodukt eller farmaceutisk produkt, som omfatter en Lactobacillus paracasei-stamme ifølge krav 1 eller et antifungalt præparat ifølge et hvilket som helst af kravene 2 til 4.
6. Fødevareprodukt ifølge krav 5, som omfatter en mængde af en Lactobacillus paracasei-stamme ifølge krav 1, som er effektiv til at bibringe fødevareproduktet antifungale egenskaber.
7. Fødevareprodukt ifølge krav 5 eller 6, hvor fødevareproduktet er valgt fra gruppen bestående af frugter og frugtafledte produkter, grønsager og grønsagsafledte produk ter, korn og kornafledte produkter, mejeriprodukter, kød, fjerkræ samt fisk og skaldyr samt blandinger deraf.
8. Fødevareprodukt ifølge krav 7, hvor fødevareproduktet er et mejeriprodukt, og mejeriproduktet er et mesofilt eller et termofilt fermenteret mælkeprodukt, såsom yoghurt eller creme fraiche.
9. Fremgangsmåde til fremstilling af et fødevareprodukt, foderprodukt eller farmaceutisk produkt, hvilken fremgangsmåde omfatter tilsætning af mindst én Lactobacillus paracasei-stamme ifølge krav 1 eller et antifungalt præparat ifølge et hvilket som helst af kravene 2 til 4 til fødevareproduktet, foderproduktet eller det farmaceutiske produkt under fremstilling og regulering af fremstillingsparametrene under fremstillingen således, at koncentrationen af den mindst ene Lactobacillus paracasei-stamme forbliver konstant eller øges.
10. Fremgangsmåde ifølge krav 9, hvor koncentrationen af den mindst ene Lactobacillus paracasei-stamme er mindst 1x106 cfu/g eller hver mindst 1x106 cfu/ml af fødevareproduktet, foderproduktet eller det farmaceutiske produkt eller mindst 1 x105 cfu/cm2 af overfladen af fødevareproduktet, foderproduktet eller det farmaceutiske produkt.
11. Fremgangsmåde ifølge krav 9, som omfatter (a) tilsætning af det antifungale præparat ifølge et hvilket som helst af kravene 2 til 4 under fremstillingen af fødevareproduktet, foderproduktet eller det farmaceutiske produkt, således at koncentrationen af den mindst ene stamme af Lactobacillus rhamnosus og/eller den mindst ene stamme af Lactobacillus paracasei hver er mindst 1x106 cfu/g eller mindst 1x106 cfu/ml af fødevareproduktet, foderproduktet eller det farmaceutiske produkt eller mindst 1x105 cfu/cm2 af overfladen af fødevareproduktet, foderproduktet eller det farmaceutiske produkt, og (b) regulering af fremstillingsparametrene under fremstillingen, således at koncentrationen af den mindst ene stamme af Lactobacillus rhamnosus og/eller den mindst ene stamme af Lactobacillus paracasei øges eller forbliver konstant.
12. Fremgangsmåde ifølge et hvilket som helst af kravene 9 til 11, hvor fremgangsmåden omfatter ét eller flere fermenteringstrin.
13. Fremgangsmåde ifølge krav 12, hvor fremgangsmåden omfatter fermentering af et mælkesubstrat med en starterkultur, som omfatter mindst én stamme af de slægter, der er valgt blandt Lactobacillus, Streptococcus, Lactococcus og Leuconostoc.
14. Anvendelse af en Lactobacillus paracasei-stamme ifølge krav 1 eller et antifungalt præparat ifølge et hvilket som helst af kravene 2 til 4 til fremstilling af et fødevareprodukt, foderprodukt eller farmaceutisk produkt.
15. Ikke-medicinsk anvendelse afen Lactobacillus paracasei- stamme ifølge krav 1 eller et antifungalt præparat ifølge et hvilket som helst af kravene 2 til 4 til inhibering afvæksten af gær og skimmelsvampe.
