Abstract
La invención se refiere a la industria alimenticia, en particular a la tecnología de producción de café instantáneo por liofilización y se puede utilizar en las fábricas de producción de café. La composición final del café en base al café liofilizado, que contiene café regular tostado molido fino dentro de los gránulos liofilizados, tiene las propiedades organolépticas del café regular molido recién pasado, y a diferencia de este, no requiere ebullición. En los métodos descritos, café regular tostado molido fino de un tipo o de una mezcla de diferentes tipos, dependiendo de las cualidades organolépticas requeridas del producto final, es introducido a un extracto de café liquido concentrado antes de la liofilización. La composición de café y método de acuerdo a la invención hace posible expandir el rango de café liofilizado mediante la introducción de aditivos alimenticios insolubles en agua en un ciclo tecnológico.
