Abstract
En la presente memoria se desvela un procedimiento de producción de un producto de café instantáneo de alto rendimiento, que comprende las etapas de: extraer granos de café tostados y molidos con agua con una temperatura de 80 ºC o menos, para producir un primer extracto y posos de café, añadir agua a los posos de café para producir una suspensión acuosa, hidrolizar la suspensión acuosa usando una enzima hidrolizante para producir un segundo extracto y restos, añadir el primer extracto al segundo extracto, opcionalmente después de la concentración y/o del secado del segundo extracto, para obtener un extracto combinado, y secar el extracto combinado para obtener un producto de café instantáneo.
