Definitions

  • the invention relates to a method for oiling the knife of a bread slicer and a device for carrying it out.
  • Bread slicers have, for example, a circular, circular and at the same time axially parallel circular movement circular knife or a crescent-shaped circular knife. These knives are continuously sprayed with a cutting oil, which is used on the one hand to cool the knives and on the other hand to improve the cut of the bread. The last point is particularly important because bread is usually cut in a fresh state and therefore tends to stick to the knife to a considerable extent.
  • the cutting oil circulated in this way is increasingly enriched with bread crumbs, which form a good breeding ground for mold. These molds lead to early mold formation on the clippings.
  • So-called flat jet nozzles are usually used to spray the cutting oil onto the knives, which do not allow precise adjustment of the oil throughput. Attempts have therefore been made to reduce the amount of oil by switching the oil supply on and off intermittently. However, this had the consequence that when the oil jet suddenly started there were clear traces of oil on the clippings. Otherwise, throttling the oil supply was only possible within certain limits, otherwise the knife would become too hot, which could result in further disadvantages.
  • the invention is therefore based on the object of providing a method of the type mentioned at the outset by which the disadvantages mentioned above are eliminated and in particular excessive oil consumption and mold formation are prevented without the knife having to be overheated.
  • this object is achieved in a method of the generic term in that a mixture of a cutting oil and a cooling gas is applied to the knife.
  • the cooling function can be performed to a considerable extent by the cooling gas flow, in particular an air flow, so that only as much oil has to be supplied as is necessary to achieve a desired sectional image.
  • the cooling gas flow can be used to take the cutting oil in relatively large droplets and to transfer it to the knife surface. In this case, it is no longer necessary to supply the oil at high pressure, so that an excess pressure of the oil of approximately 0.1 to 0.2 bar is sufficient. This is in contrast to conventional methods, in which the oil was supplied at considerable pressure without the addition of gas and in the process was atomized in part in a fog-like manner, so that it was not guaranteed that all the oil would reach the knife surface.
  • the method according to the invention enables the oil supply to be reduced to a proportion of only 10-15% in comparison with the conventional methods.
  • an oil circulation can be almost completely or completely eliminated, so that the aforementioned risk of mold growth is eliminated.
  • a device comprises a nozzle, through which a low-pressure oil flow is supplied in a central nozzle bore and in which the central nozzle bore is surrounded by a circular opening provided with a helical guide for the gas supply, so that a helically swirled one Gas jet emerges, which takes the oil in relatively thick droplets.
  • the cooling gas has an excess pressure of, for example, 0.3 to 0.4 bar.
  • oil and gas nozzles which are located next to one another or are otherwise assigned to one another can also be used.
  • the oil can also be supplied using a centrifugal disc, which also draws in cold air.
  • FIG. 1 and 2 show, as an essential part of a bread slicer, a circular knife, which is referred to as a circular knife 10.
  • the circular knife 10 is rotatably mounted on an axis 12, which in turn is rotatable about a parallel axis 16 via a crank arm 14, so that the circular knife 10 is rotated on the one hand about its axis 12 and on the other hand performs a circumferential movement about the axis 14, such as that dashed circles 10 'and 10 "in Fig. 2 indicate.
  • the position 18 of the bread is indicated in Fig. 2.
  • the bread is advanced by a suitable feed mechanism, not shown, for each revolution of the circular knife around the axis 16 by a cutting thickness.
  • nozzles 20, 22 are provided on both sides of the circular knife, through which a mixture of cutting oil and a cooling gas, cooling air in the example shown, is sprayed on.
  • These nozzles 20, 22 are shown in more detail in FIGS. 3 and 4.
  • the nozzles 20, 22 have a central nozzle bore 24 which converges in the shape of a truncated cone in a front section 26 on the left in FIG. 3.
  • nozzle body 28 In the nozzle bore 24 there is a rod-shaped nozzle body 28 which can be moved in the longitudinal direction and has a frustoconical front end. The cross-sectional area of an annular outlet opening can therefore be adjusted by longitudinally displacing the nozzle body 28.
  • annular chamber 30 On the outer circumference of the nozzle 20, 22 there is an annular chamber 30, which is connected via bores 32 running parallel to the axis of the nozzle to a supply line for the cooling gas, not shown in FIGS. 3 and 4.
  • This chamber 30 opens out via the screw-shaped recesses 34 indicated in FIG. 4 on the circumference of the annular outlet opening for the cutting oil, designated 36.
  • the escaping oil ring is therefore entrained by the helically swirling cooling air or another cooling gas.
  • a cap 35 closes off the nozzle.
  • Fig. 1 shows the arrangement of these nozzles 20, 22 in the supply system for oil and gas.
  • a switch box 38 is indicated as a dashed rectangle.
  • Compressed air line 40 enters this switch box 38 and branches into branch lines 42 and 44.
  • the pressure of the compressed air supplied through the compressed air line 40 is approximately 5 to 6 bar. This pressure continues unchanged in the branch line 42, into which a solenoid valve 46 or another closing valve is switched on, and reaches the two nozzles 20, 22 through further branch lines 48, 50.
  • the air in the branch lines 54, 56 which is under relatively low pressure, serves as cooling or purging air in the nozzles.
  • the air in the branch lines 48, 50, which is at a higher pressure of 5 to 6 bar, is used as the control pressure for the axial displacement of the nozzle body 28 according to FIG. 3.
  • An oil line 58 into which an oil pump 60 is switched on also enters the switch box 38.
  • a spring-loaded pressure relief valve 62 is connected in parallel with the oil pump 60, through which excess oil can be returned to a container (not shown).
  • the oil line 58 branches behind the oil pump 60 into two branch lines 64, 66, which are fed to the nozzles 20, 22. These branch lines are connected to the nozzle bore 24 in the interior of the nozzles 20, 22.
  • the overpressure of the oil is approximately 0.1 to 0.2 bar.
  • the method and device of the invention can also be used on bread slicers with rotating, crescent-shaped knives.
  • Ultrasonic atomizers can be considered as a further device for dispensing oil and possibly also air onto the circular-knife 10.
  • Such ultrasonic atomizers can also contain an air chamber for discharging the air. Possibly. the air can also be supplied separately.
