Claims (16)
- Dispositif de broyage en vue de la préparation d'une masse pâteuse, en particulier de pâte à saucisses á cuire, avec une machine de broyage (1). la machine de broyage présentant une cuve (6) avec au moins un broyeur grossier (8,9) et qu'à la cuve (6) est raccordée l'arrivée (16) d'un broyeur fin (15), caractérisé en ce que la machine de broyage (1) est reliée par l'intermédiaire d'une première installation d'alimentation (4) à un premier dispositif d'alimentation (2) pour les ingrédients principaux essentiellement solides, tels que viande, graisses et similaires de la masse pâteuse, et par l'intermédiaire d'une seconde installation d'alimentation (5) à un second dispositif d'alimentation (3) pour les additifs essentiellement liquides.
- Dispositif selon la revendication 1, caractérisé en ce que le premier dispositif d'alimentation (2) présente une pompe d'alimentation (17), en particulier avec un moteur électrique d'entraînement (18).
- Dispositif selon la revendication 1 ou 2 caractérisé en ce que le second dispositif d'alimentation (3) présente une seconde pompe d'alimentation (23), en particulier avec un moteur électrique d'entraînement (14).
- Dispositif selon l'une au moins des revendications précédentes, caractérisé en ce que la première et la seconde installation d'alimentation (2,3) consistent chacune en au moins une conduite tubulaire.
- Dispositif selon l'une au moins des revendications 2 à 4, caractérisé en ce qu'au-dessus de l'orifice d'entrée de la première pompe d'alimentation (17) est posé une première cuve de remplissage (20), en particulier en forme d'entonnoir, dans laquelle se trouve au moins un moyen d'alimentation entraînable, en particulier une vis d'alimentation ou similaire.
- Dispositif selon l'une au moins des revendications 3 à 5, caractérisé en ce que la seconde pompe d'alimentation (23) du second dispositif d'alimentation (3) se présente sous la forme d'une pompe de broyage fin dont l'orifice d'entrée est raccordé à un second réservoir de remplissage (29), dans lequel un outil de broyage entraînable (28) est déposé à rotation.
- Dispositif selon la revendication 6, caractérisé en ce que dans la seconde installation d'alimentation (5) se présentant sous la forme d'une conduite tubulaire, est disposée une vanne à trois voies (30) dont le troisième raccordement est relié à la seconde cuve de remplissage (29) par l'intermédiaire d'une conduite auxiliaire (31).
- Dispositif selon la revendication (7), caractérisé en ce qu'une vanne d'isolement (32) est située entre la vanne à trois voies (30) et la cuve (6) de la machine de broyage (1).
- Dispositif selon l'une au moins des revendications 5 à 8, caractérisé en ce que la cuve (6) de la machine de broyage (1) est équipée d'un séparateur sous vide (58).
- Dispositif selon l'une au moins des revendications 5 à 9, caractérisé en ce que la cuve (6) est réalisée avec une double paroi (52) dont l'espace intermédiaire peut être rempli (53) d'un fluide de refroidissement ou de chauffage. et en particulier d'eau.
- Dispositif selon l'une au moins des revendications 5 à 10, caractérisé en ce que la cuve (6) de la machine de broyage (1) présente au moins un raccordement (34,35) pour une conduite de vapeur et une sonde de température (36).
- Dispositif selon l'une au moins des revendications 5 à 11, caractérisé en ce qu'une vis d'alimentation entraînable (45) ou similaire peut être mise en rotation dans la cuve (6) de la machine de broyage (1), et en particulier au moins à son extrémité de décharge.
- Dispositif selon l'une au moins des revendications 5 à 12, caractérisé par deux broyeurs grossiers (8,9) situés face à face par rapport à la machine de broyage (1), et un racleur (49).
- Dispositif selon l'une au moins des revendications précédentes, caractérisé en ce que le broyeur fin (15) de la machine de broyage (1) se présente sous la forme de ce qu'on appelle une extrudeuse avec au moins une grille d'extrusion (39, 40) avec des couteaux de coupe (37,38) coopérant avec cette grille.
- Dispositif selon la revendication 14, caractérisé en ce que le broyeur fin (15) présente contre les grilles d'extrusion (39,40) un dispositif de réglage des couteaux (59) automatique. et en particulier commandé par le courant alimentant le moteur d'entraînement.
- Dispositif selon l'une au moins des revendications précédentes, caractérisé par un dispositif électrique de commande (50) en vue de la commande automatique des temps d'enclenchement des entraînements rotatifs du mélange, du broyage et de l'alimentation, ainsi que du dispositif d'évacuation et de ventilation.
