Definitions

  • the invention relates to a device for cutting mushrooms, in particular fresh mushrooms, into slices.
  • a table device for cutting food e.g. Celery, potatoes, tomatoes and similar fruits known, in the base of which a recess for the material to be cut is provided.
  • a cutting grid consisting of knives is pivotally mounted about an axis against the force of a return spring, which passes close to the edge of the receiving trough, so that the cutting grid executes a pivoting movement of almost 90 degrees during cutting. This pivoting movement exerts a strong tipping load on the material to be cut when the knives first hit, which is not a problem with round, spherical material to be cut.
  • the invention has for its object to provide a device for cutting mushrooms, especially fresh mushrooms, into slices, with which smooth slices can be cut from the full mushroom shape, the device should also be used for mushrooms of very different sizes.
  • the possibility provided according to the invention of being able to apply the cutting pressure with both hands allows, on the one hand, very sensitive work and, on the other hand, also the cutting of relatively tough mushrooms.
  • the mushroom upside down, is cut, so that the cutting grate first cuts into the mushroom stem, which has a relatively high toughness.
  • the mushroom head In order to avoid excessive crushing or breakage of the mushroom, the mushroom head must lie fully in its central region on the trough bottom, which is why, according to the invention, the receiving trough has a slightly curved base that extends over more than 2/3 of the diameter of the trough opening and then has steep edges.
  • the size and bulge of the trough-shaped receiving trough is chosen in accordance with the largest commercially available mushrooms, so that there is a perfect support of their central head area for the largest and also for all smaller mushrooms.
  • the knives penetrate into the mushroom head through the soft underside, the mushroom head now being pressed more or less tightly against the trough bottom, depending on its toughness, until the knives cut through the mushroom skin.
  • the sliced mushroom slices must later be placed in a pan or other container, whereby they should be isolated, that is, they should no longer stick together. This is also easy to carry out, since the mushroom slices are still held on the cutting device after cutting through the back of the knife, so that the mushroom slices can be transferred directly into a pan or the like by tipping out the cutting device in the manner of a spoon, the slice packet now jumping apart and the slices occasionally fall into the pan or the like.
  • the aforementioned limit stop also ensures that the knife edges themselves do not hit the wall of the receiving trough, thus preventing the knives from becoming prematurely blunt. Practical tests have shown that the use of very sharp knives is very important for the present application.
  • the invention further provides that the knife receiving grooves of the receiving troughs are narrower than the intermediate mushroom support webs, each of which has a wide top, lying in the trough contour.
  • the grooves are V-shaped in cross section, the side walls of the grooves each lying in one plane.
  • the cutting grid frame has a round frame part which, when the device is closed, encloses the receiving trough, on the rear arch region of which the knives are each fastened with one end, that the knives with their front end on the underside of the approximately cutting-grid-shaped grip projection are fastened, an arc-shaped bead approximately parallel to the rear arch region being advantageously formed on the underside of the grip projection, in which the front knife ends sit and which is aligned with a counter-stop on the top of the grip projection of the other tong arm.
  • the receiving trough is formed in a frustoconical base body, which sits with its larger base surface on the essentially straight gun arm.
  • the device can also be placed on a table with its receiving-arm side and handled as a table-top device if particularly tough material to be cut is to be processed.
  • the cutting device consists of two pincer arms 2, 3 which are articulated at their rear end, can be gripped with one hand and can be compressed against a return spring 1, the pincer arm 2 carrying a cutting grid 4 at the front end, which is aligned with a receiving trough 5 on the other pincer arm 3.
  • the receiving trough 5 has a round trough shape 6 which is suitable for receiving a mushroom standing upside down.
  • the bottom 7 of the trough is only slightly curved, and the steep trough edges 8 lie only in an outer sixth-diameter region.
  • the cutting grid 4 consists of seven, parallel stainless steel knives 9, which are assigned seven receiving grooves 10 with a slightly V-shaped cross section on the trough bottom.
  • Both pliers arms 2, 3 are each extended at the front beyond the cutting grid 4 or the receiving trough 5 and there have grip projections 11, 12 of approximately the width of the cutting grid 4.
  • the device is gripped and actuated in the position according to FIG. 1, for example with the right hand in the area of the tong arms 2, 3.
  • the grip projections 11, 12 allow an additional cutting pressure to be exerted with the second hand.
  • the receiving trough 5 is formed in a frustoconical base body 13, which sits with its lower, larger base surface on the essentially straight tong arm 3.
  • a stop 14 is formed, on which an arcuate bead 15 arranged on the underside of the handle projection 11 of the other pliers arm strikes when the cutting grid is pressed down, before the cutting of the knives 9 on the floor the receiving grooves 10 hit; see. Fig. 4, in which the end position of the knife 9 is indicated.
  • the receiving grooves 10 are significantly narrower than those in between, in particular in the region of the trough bottom 7 Mushroom support webs 16, each of which has a broad top, lying in the trough contour.
  • the cutting grid frame has a round frame part 17, which encloses the receiving trough 5 when the device is closed, to the rear arch region 18 of which the knives 9 are each fastened with one end.
  • the cutting grid frame also has, on the underside of its grip projection 11, an arcuate bead 19 which is approximately parallel to the rear arch region and in which the front ends of the knives 9 are seated and which in its central region also serves as a counter stop 15 for the stop 14.
  • all knives 9 have the same length, the excess lengths of the knives being received and covered here by the grip projection 11.
  • the cutting device is also equipped with a hinge lock 20, as described in more detail, for example, in DE-AS 11 77 086 and which allows the device to be locked in the closed position so that it can be stored in a space-saving manner.
