Definitions

  • hamburgers are made manually by placing a piece of meat, taken from a baking oven, between two halves of buns.
  • this piece of meat consists of a chopped steak.
  • it can be a piece of meat of a different nature, for example a piece of poultry. This is why in the rest of this description, the term “hamburger” generally designates any food consisting of a piece of meat, of any kind, which comes out of cooking, and is placed between two halves of rolls.
  • the present invention relates to a machine specially designed to allow a consumer to control himself the automatic preparation of a hot hamburger ready to be eaten and whose steak is cooked just before consumption.
  • This machine is intended to be able to operate at any time without labor intervention, in order to be made available to consumers so that they can obtain hot burgers made on demand and not not just warmed up.
  • US -A- 3,384,497 shows a machine for making and distributing hot dogs, its operation being able to be triggered by a consumer by means of a payment system.
  • the sausages are stored in a refrigerator and cooked in an oven crossed by a conveyor. After cooking each sausage is put in a bun.
  • this machine does not use two halves of rolls, but a whole roll cut on one side to get a slit to put the piece of meat in there. With such a machine, you can't make a hamburger.
  • US -A- 1,973,195 shows a machine for making and distributing sandwiches, its operation being able to be triggered by a consumer by means of a payment system.
  • this machine two slices of bread are placed simultaneously on a conveyor: one of the slices is spread with butter, the other is garnished with any ingredient and after the two halves are folded and the sandwich thus obtained is wrapped. With such a machine, you cannot therefore make a hamburger either.
  • the present machine comprises, between the two stores for the distribution of halves of rolls, a series of several successive stores for the distribution of additive ingredients and there is a programmer controlling these various stores to allow the consumer choose the ingredient (s) that will be added to the reconstituted hamburger steak ordered by him.
  • a consumer can choose these ingredients and seasonings beforehand at the same time as he orders the making and distribution of one or more several hamburgers per operation of the payment system of the machine and control of the programmer thereof.
  • Figure 1 is a schematic view in longitudinal section of the assembly of a machine according to the invention.
  • Figure 2 is a schematic view in horizontal section.
  • Figure 3 is a schematic sectional view illustrating the method of packaging a hamburger after making it.
  • Figure 4 is a perspective view showing the packaging made and the hamburger placed inside thereof.
  • Figure 5 is a partial view similar to Figure 1, but which shows another embodiment of a machine according to the invention.
  • Figure 6 is a schematic view in horizontal section.
  • FIG. 7 is a schematic cross-sectional view of the cooking oven along line VII-VII of FIG. 6.
  • FIGS 8 and 9 are detail views showing in elevation the clamps fitted to two of the conveyors provided in the baking oven.
  • FIG. 10 is a diagrammatic view at the end of the clamp shown in FIG. 8.
  • the feeding station comprises a device for reconstituting minced steaks, which is designated by the general reference 13.
  • This device which can be of the type described in patent FR 2,589,686, is suitable reconstituting a minced steak 14 by means of a mincer and a drawer 15 forming a mold, and this from a chute 16 containing meat in pieces.
  • the assembly is arranged inside a refrigerated enclosure and at the lower part thereof it can be provided a tray 17 containing a reserve of pieces of meat.
  • the feeding station of the present machine could just as easily consist of a reserve of frozen minced steaks already reconstituted and stored at negative temperature.
  • this feeding station is such that each reconstituted steak thus obtained is transferred to a lying position on the first part 7 of the conveyor. This steak is thus transferred inside the oven 8 which constitutes the cooking station. It then passes over part 10 of the conveyor which is intended to ensure its transfer to station 5 for placing halves of rolls and additive ingredients.
  • This station has two extreme stores 18 and 19 for storing halves of rolls.
  • the first magazine 18 is used to store a first series of such halves 20 of rolls which are arranged one above the other so that their cutting plane is directed upwards.
  • the second store 19 it is used to store a second series of halves 21 of rolls which are arranged one above the other in the opposite direction.
  • These two stores constitute one and the other distribution stations of each of the halves of rolls belonging to one and the other series.
  • each of these stores is constituted by a vertical chute, capable of delivering, each time, half of rolls.
  • these halves of rolls are stored hot, thanks to a heating of the stores 18 and 19. This heating can be ensured by connection to one or more conduits 22 connected to the baking oven 8 and comprising an air extractor 23. Thus, it is the hot air taken from or around the oven 8 which heats the two stores 18 and 19.
  • the conveyor 11 placed at the location of the distribution station for halves of rolls and additive ingredients, is located at a level below the transfer conveyor 10 located upstream. This level shift is such that each steak reconstituted 14a conveyed by the conveyor 10 is deposited by the latter on the cutting plane of a half of roll 20a of the first series, which has been placed beforehand on the upstream end of the conveyor 11 (see FIG. 1 ). This therefore automatically ensures that each minced steak is placed on the first half of a roll which serves as its support.
  • station 5 Following the first magazine 18 for distributing halves of rolls, station 5 comprises a series of several separate magazines 24a, 24b, ... 24f which are intended to ensure the distribution of additive ingredients.
  • magazines 24a, 24b, ... 24f which are intended to ensure the distribution of additive ingredients.
  • these stores 24a can be assigned for example to the distribution of the following ingredients: spices, slice of cheese, salad, onions, spicy tomato sauce ("Ketchup"), mustard. All these stores are grouped together inside an enclosure 25 which is thermally insulated from the two stores 18 and 19 and which is refrigerated, for example at a temperature of + 6 ° to + 8 °.
  • the various distribution stores 24a,... 24f may be constituted by vertical troughs, the lower orifice of which is arranged opposite the conveyor 11.
  • a retaining member or a metering device is provided at the lower end to deliver to each times a determined dose of the corresponding ingredient.
  • mustard and pasty seasoning sauces it can be a pressure dispenser.
  • Volumetric dispensers are provided for the distribution of doses of salad and onions.
  • spices it is a dispenser dispenser.
  • cheese is a cutting device capable of cutting a slice from a block of cheese introduced into the corresponding store.
  • the second magazine 19 for distributing each of the halves 21 of rolls of the second series is located at the downstream end of the station 5.
  • This magazine is capable of delivering, on the blank hamburger produced previously, a second half of roll 21 forming a covering element. This therefore completes the preparation of a hamburger 26, which is then transferred to the conveyor 12 provided at the location of the packing station 6.
  • each hamburger 26 is produced by making a sort of pocket 27 around it, and this from two films 28 and 29 made of heat-sealable food-grade paper.
  • the first film 28 is unwound from a reel 30 disposed at the bottom of the machine, this film being engaged in the gap existing between the two conveyors 11 and 12 so that its free end is placed on top from this second conveyor to receive each finished hamburger 26 coming from the conveyor 11.
  • the welding station comprises a movable electrode 32 capable of producing the welding of the two films 28 and 29 along two lines 33 and 34 arranged at right angles.
  • the first 33 of these two weld lines extends transversely behind the position of the hamburger 26a to be packaged.
  • the second weld line 34 it extends on only one of the longitudinal sides of the two films so as to leave open the opposite longitudinal side so that the packaging produced 27 takes the form of a sort of pocket open on a side.
  • the present packing station also includes a cutting blade 36 which is arranged transversely and which is capable of cutting each transverse weld 33 in two parts to detach a completed package 27 and leave a transverse weld line 35 at the front of the location of the next package (see Figure 4).
  • a programming system which is not shown. It may be a coin-operated system or else a payment system by magnetic card or the like, this system being installed at the location of a control panel 42 disposed on the front face of the machine (see figure 1).
  • this table also includes the various control buttons 43a of a programmer which is provided to allow the consumer to choose himself the ingredients which will be added to the hamburger ordered by him.
  • This programmer is designed so that the consumer can add a maximum of five different ingredients chosen from the six provided. However, this scheduler also doubles the dose of one of the chosen ingredients, in which case three other different ingredients can be added to it.
  • the consumer After programming the desired ingredients, the consumer must proceed with the validation of this order.
  • the design of the machine is such that it is possible to order several hamburgers at one time, the number of which may for example be between one and five, subject to a corresponding payment. Control of the desired quantity is ensured by actuating one or other of the buttons 43b. There are further provided keys 43c for validation and cancellation as well as indicator lights 44 associated with buttons 43a.
  • This machine is intended to be made available to consumers, for example in shops or public places to operate at all hours of the day and night. So it can be placed in shopping centers, all public buildings, amusement parks, performance halls, exhibition places, service stations. It can then be installed inside a building or outside, on a public road. These multiple possibilities of installation and use without labor intervention constitute an essential advantage of the present machine, since the consumers can themselves order hamburgers, and this at any time.
  • the machine according to the invention is not limited to dispensing burgers made in advance and which would simply be reheated when they are ordered by consumers. In fact, this machine makes each hamburger on demand from the usual basic elements and the reconstituted steak is itself cooked in the usual way just before consumption. Consequently, the present machine dispenses fresh burgers which are supplied hot and in their normal state with the same taste qualities as burgers made manually at the request of the consumer.
  • the present machine can distribute any other piece of baked meat between two complementary halves of buns 20 and 21. It can in particular be pieces of poultry which have been baked in the oven 8 of the same as described above in the case of reconstituted chopped steak.
  • the present machine may possibly not include the various stores 24a, 24b, ... 24f for distribution of ingredients and additive seasonings, the programmer associated with these also being deleted.
  • the present machine only comprises the two magazines 18 and 19 for distributing rolls.
  • these it may possibly include one or two seasoning distribution stores, each time operating automatically without the possibility of modification by the consumer.
  • Such a machine is obviously less sophisticated than that described above, but it has the advantage of being much less expensive.
  • Figures 5 and 6 show yet another embodiment of the machine according to the invention. This differs from those of Figures 1 and 2 in particular by the fact that the halves of rolls are no longer stored hot but are kept at room temperature to be toasted in the oven at the same time as the cooking of the chopped steak or another piece of meat planned.
  • the example described below concerns the case of chopped steaks. These are stored in frozen form, after having been pre-braised.
  • a refrigerated enclosure 102 located upstream of the corresponding oven 108.
  • the steaks 14 are conveyed to this oven by a conveyor 107.
  • the first magazine is used for the storage of the first series of halves 20 of rolls, while the magazine 119 is used for the storage of the halves 21 of rolls 21 of the second series.
  • the oven 108 contains three conveyors arranged in parallel, namely a first conveyor 109 located in the middle and which ensures the transport of the steaks to be cooked.
  • This conveyor comprises perforated clamps 130 capable of maintaining such a steak in a vertical position during its journey inside the oven 108.
  • One of the jaws of these clamps is articulated so as to allow the gripping of such a steak from upstream conveyor 107 and its subsequent distribution on a downstream conveyor.
  • two other conveyors 131 and 132 are provided which include grippers 133 capable of holding the halves of rolls 20 and 21 of the two series vertically, as shown in FIG. 7, these halves rolls from the two storage stores 118 and 119.
  • the oven 108 has electrical resistors 134 which are arranged on either side of the central conveyor 109.
  • this oven ensures both the cooking of steaks 14 and a slight superficial roasting of the halves of rolls 20 and 21.
  • an oven 135 intended to receive both the steaks 14 and the halves of rolls 20 and 21 leaving the oven.
  • This oven is maintained at a temperature which can be of the order of 40 to 70 °, for example 65 °, this oven being intended to constitute in a way a "buffer" zone.
  • the baked steak 14 is collected by a conveyor 109.
  • the halves of rolls 20 and 21 of the two series they are collected respectively by two lateral conveyors 136 and 137. These extend parallel to the conveyor 109, on either side of the latter.
  • the conveyor 136 is located at a level lower than the conveyor 109.
  • the downstream end 138 of the conveyor 136 is contiguous to the upstream end 139 of the conveyor 111 situated in the extension of the conveyor 109, but at the same level as the conveyor 136.
  • a suitable transfer member for example a lateral pusher 140, ensures the transfer of each half of the roll 20 of the first series to the upstream end 139 of the conveyor 111. When this transfer is made, this half of the roll receives a steak 14 from conveyor 109.
  • the second lateral conveyor 137 already mentioned extends to the downstream end 143 of the central conveyor 111. However, this conveyor 137 is located at a higher level so as to be able to transfer the halves 21 of rolls of the second series to the above a hamburger blank consisting of a first half of a bun 20 carrying a steak 14 and the ingredients provided. The transfer of this second half 21 of the roll is ensured by an appropriate member, for example a lateral pusher 144. After this transfer, the production of a complete hamburger 26 is thus obtained in the same manner as in the machine described above. Furthermore, following the machine as described above, there is provided a packaging station identical to that of the machine according to FIGS. 1 and 2. This is the reason why this station is not shown. in Figures 5 and 6.
  • the programming system provided on this machine is such that as soon as an order is executed, a steak 14 comes out of the oven 135, while two complementary halves 20 and 21 of rolls also come out of this oven to be brought back from on either side of this steak as described above. An automatic control then ensures cooking in the oven of another steak. This saves considerable time on all operations.
  • the machine according to the invention can be equipped with two separate meat tanks so as to offer consumers a choice between two different types of meat, for example chopped steaks on the one hand and poultry pieces on the other go.
