Claims (15)

  1. Procédé pour commander une machine à découper des aliments, dans lequel des tranches d'aliments coupées sont reprises avec un dispositif de dépôt entraîné automatiquement dans un plan de coupe et sont transférées dans une position de dépôt au moyen d'un distributeur, dans lequel on prédétermine au moins un paramètre de l'aliment à découper, caractérisé en ce que l'on détermine ensuite à l'aide de ce paramètre ou de plusieurs de ces paramètres un profil d'entraînement approprié pour le distributeur du dispositif de dépôt, dans lequel on commande de façon variable le couple initial du distributeur au moyen du profil d'entraînement approprié en fonction du ou des paramètre(s).
  2. Procédé selon la revendication 1, caractérisé en ce que l'on commande de façon variable, à l'aide du profil d'entraînement, une allure de course et/ou une allure de force et/ou une allure de vitesse du distributeur.
  3. Procédé selon la revendication 1 ou 2, caractérisé en ce que l'on sélectionne de façon ciblée le profil d'entraînement parmi plusieurs profils d'entraînement mémorisés à l'aide du ou des paramètre(s).
  4. Procédé selon la revendication 1 ou 2, caractérisé en ce que l'on calcule le profil d'entraînement en tenant compte du ou des paramètre(s) suivant un algorithme prédéterminé.
  5. Procédé selon l'une quelconque des revendications 1 à 4, caractérisé en ce que l'on prédétermine comme paramètre le diamètre et/ou l'épaisseur de la tranche coupée et/ou la nature de l'aliment à découper et/ou une position de dépôt déterminée.
  6. Procédé selon l'une quelconque des revendications précédentes, caractérisé en ce que l'on commande un moteur d'entraînement du distributeur à l'aide du profil d'entraînement.
  7. Machine à découper des aliments avec un couteau rotatif (11) pour couper des tranches d'aliments, un cadre de chaînes de transport (3) pour recevoir et transporter les tranches d'aliments coupées et un dispositif de dépôt (4) pour déposer les tranches d'aliments sur une surface de dépôt (43) avec un distributeur (41) s'engageant entre les chaînes (31) du cadre de chaînes de transport (3), qui peut pivoter autour d'un axe de pivotement (A) par un entraînement motorisé, dans laquelle un dispositif de commande (6) commande le moteur d'entraînement (5) du distributeur (41) et dans laquelle le dispositif de commande (6) présente un dispositif d'entrée (7) pour entrer un ou plusieurs paramètre(s) de l'aliment à découper, caractérisée en ce que le dispositif de commande détermine, à l'aide d'un ou de plusieurs de ces paramètres, un profil d'entraînement approprié qui fait varier la force de séparation des tranches par une commande variable du couple initial du distributeur (41) en fonction du ou des paramètre(s).
  8. Machine à découper selon la revendication 7, caractérisée en ce que le dispositif de commande (6) détermine le profil d'entraînement à l'aide de l'épaisseur des tranches et/ou du diamètre des tranches et/ou de la vitesse de coupe comme paramètre.
  9. Machine à découper selon l'une quelconque des revendications 7 à 8, caractérisée en ce que le dispositif de commande (6) présente une mémoire (61), dans laquelle plusieurs profils d'entraînement différents sont mémorisés et le dispositif de commande (6) sélectionne un de ces profils d'entraînement à l'aide du ou des paramètre(s).
  10. Machine à découper selon l'une quelconque des revendications 7 à 9, caractérisée en ce que le dispositif de commande (6) comporte un algorithme pour calculer un profil d'entraînement et calcule un profil d'entraînement déterminé à l'aide du ou des paramètre(s).
  11. Machine à découper selon l'une quelconque des revendications 7 à 10, caractérisée en ce que le moteur d'entraînement (5) du distributeur (41) est un moteur synchrone ou un moteur pas à pas et le dispositif de commande (6) commande le moteur d'entraînement (5) à l'aide du profil d'entraînement sélectionné.
  12. Machine à découper selon l'une quelconque des revendications 7 à 11, caractérisée en ce que le dispositif de commande (6) commande la fréquence et/ou la consommation de courant du moteur d'entraînement (5).
  13. Machine à découper selon l'une quelconque des revendications 7 à 12, caractérisée en ce que l'arbre de sortie (51) du moteur d'entraînement (5) forme l'axe de pivotement (A) du distributeur (41).
  14. Machine à découper selon l'une quelconque des revendications 7 à 12, caractérisée en ce que le moteur d'entraînement (5) entraîne l'axe de pivotement (A) du distributeur (41) au moyen d'une transmission (52), de préférence une transmission à courroie ou un engrenage.
  15. Machine à découper selon l'une quelconque des revendications 7 à 14, caractérisée en ce que le dispositif de commande (6) présente un détecteur pour détecter la course du distributeur (41) et règle le moteur d'entraînement (5) en fonction des signaux du détecteur.
