Abstract

The strip product is preserved up to the time of its use in an acidulated brine. The improvements consist in said acidulated brine having added to it mother-brines of olives, the latter products having to be stuffed with the strip of pepper or product obtained, in order to prevent oxidation and losses of colour of the aforesaid product or strip of pepper. The percentage of amounts of mother brines to be added will be between 5 and 50% over the volume of preserving brine so that, in percentages above 10%, it is suitable to pasteurize and filter the brine.
