Abstract
The process consists in different molluscs and/or crustaceans, either whole or previously extruded, being subjected to a heat treatment at temperatures which vary between 50 and 150 degree C, the next stage being mincing (chopping) or extrusion of the mass and the addition of antioxidants, flavourings and colourings until a minced or extruded substance is obtained which resembles the viscera of the spider crab or similar species, and this is mixed with natural or artificial spider-crab muscle fibres, this process producing a prepared, oven-ready food product similar to Txangurro.
