LOS TOMATES SON DESHIDRATADOS MEDIANTE LA SELECCION DE LOS ROJOS Y MADUROS Y EL LAVADO DE LOS TOMATES SELECCIONADOS CON UN BIOCIDA Y ENJUAGUE CON AGUA FRESCA. LA FRUTA ENJUAGADA ES CORTADA EN TROZOS APROXIMADAMENTE CUBICOS Y BLANQUEADOS MEDIANTE EL CALENTAMIENTO DE LOS TROZOS A UNA TEMPERATURA DE O POR ENCIMA DEL PUNTO DE EBULLICION DEL AGUA POR UN TIEMPO DE MENOS DE 10 MINUTOS PARA INACTIVAR LAS ENZIMAS CONTENIDAS EN EL TOMATE. LOS TOMATES BLANQUEADOS SON ENFRIADOS A TEMPERATURA AMBIENTE Y ENTONCES SON PELADOS. DESPUES DE ELIMINAR LA PIEL Y LAS SEMILLAS PARA FORMAR ZUMO DE TOMATE A PARTIR DE LOS TROZOS PELADOS, EL ZUMO ES EVAPORADO AL VACIO PARA FORMAR UN CONCENTRADO EN FORMA DE PASTA TENIENDO UN CONTENIDO SOLIDO APROXIMADO DEL 20 AL 30%. EL AIRE ATRAPADO EN EL CONCENTRADO ES ELIMINADO. EL CONCENTRADO ES ENTONCES DIVIDIDO EN PIEZAS Y SECADO HASTA QUE EL CONTENIDO DE HUMEDAD DE LAS PIEZAS ES DEL 3 AL 4%.
