DE NITROGENO Y ANHIDRIDO CARBONICO GASEOSOS, EN DISTINTAS PROPORCIONES. LA CONSERVACION DE LAS PIEZAS ASI ENVASADAS PUEDE HACERSE A TEMPERATURA AMBIENTE, SIN NECESIDAD DE FRIO. UNA SIMPLE COCCION EN HORNO DURANTE UNOS POCOS MINUTOS PERMITE OBTENER UN PAN CON CARACTERISTICAS DE RECIEN ELABORADO. EL SISTEMA SE UTILIZA PARA EL ENVASADO DE PIEZAS DE PAN O DE BOLLERIA ANTES DE SU COCCION, PUDIENDOSE CONSERVAR Y ALMACENAR EL PRODUCTO SIN NECESIDAD DE REFRIGERACION O CONGELACION.
