PROCEDIMIENTO PARA LA OBTENCION DE VINOS Y MOSTOS DE UVA CON BAJO CONTENIDO EN TANINOS. EL PROCEDIMIENTO, TRAS LAS FASES CONVENCIONALES DE DESPALILLADO, ES DECIR DE ELIMINACION DE LOS RASPONES DE LOS RACIMOS DE UVA, Y ELIMINACION DE SUS PEPITAS, CONSISTE EN SOMETER A LA PASTA RESULTANTE A UNA FASE DE DESHOLLEJADO, EN LA QUE SE ELIMINAN TAMBIEN LOS HOLLEJOS, DE MANERA QUE AL SER TALES HOLLEJOS PORTADORES DE UNA ALTO CONTENIDO EN TANINOS, ESTOS NO PASAN AL MOSTO NI, CONSECUENTEMENTE, AL VINO RESULTANTE. COMPLEMENTARIAMENTE ESTE DESHOLLEJADO DE LAS UVAS, PERMITE QUE LA PULPA PUEDA SER SOMETIDA A UNA FASE DE CENTRIFUGADO PARA SEPARAR EL MOSTO DE LOS RESIDUOS SOLIDOS DE DICHA PULPA.
