LA PRESENTE INVENCION CONSISTE EN LA OBTENCION DE UNA CEPA INDUSTRIAL DE LEVADURA DE PANADERIA CAPAZ DE EXPRESAR Y, EXPORTAR AL EXTERIOR CELULAR LA ENZIMA ENDOXILANASA X24 DE ASPERGILLUS NIDULANS Y EN LA OBTENCION DE UNA CEPA INDUSTRIAL DE PANADERIA CAPAZ DE EXPRESAR Y EXPORTAR AL EXTERIOR CELULAR. CONJUNTAMENTE, LA ENZIMA ENDOXILANASA X24 DE ASPERGILLUS NIDULANS Y LA ENZIMA AL-AMILASA DE ASPERGILLUS ORYZAE, CON EL FIN DE AUMENTAR EL PROCESO DE DEGRADACION DE LAS HEMICELULOSAS Y, ALMIDON PRESENTES EN LA HARINA Y, CONSECUENTEMENTE, MEJORAR EL VOLUMEN, TEXTURA Y, VIDA MEDIA DEL PAN ELABORADO.
