LA INVENCION SE REFIERE A UN PROCESO PARA LA PREPARACION DE UN INTERMEDIO GRANULAR SOLIDO UTIL PARA LA PRODUCCION DE CHOCOLATE. EN ESTE PROCESO, SE REMUEVE UNA MEZCLA QUE CONTIENE UN EDULCORANTE ESPESO, UN MATERIAL LACTEO, LICOR DE CACAO Y AGUA HASTA FORMAR UNA MASA HOMOGENEA, SE CALIENTA LA MASA AL TIEMPO QUE SE AMASA Y SE LE SOMETE A UN VACIO PARA RETIRAR EL AGUA Y SE SIGUE AMASANDO BAJO VACIO HASTA QUE LA MASA SE CRISTALIZA. EL EDULCORANTE ESPESO CONSISTE PRINCIPALMENTE EN ALCOHOL DE AZUCAR, Y LA TEMPERATURA DE LA MASA SE CONTROLA DE MODO QUE AL MENOS UNA PARTE DEL EDULCORANTE ESPESO SE ENCUENTRE PRESENTE EN ESTADO SOLIDO DURANTE EL AMASADO EN VACIO.
