Abstract
Procedimiento para la preparación industrial de tartas de queso. Comprende el batido de requesón, yema de huevo, vainilla, sorbato potásico, clara de huevo, yema de huevo y sal, con ingredientes compatibles, para la obtención de tartas de queso de las variantes ligera y cuadrada. La primera incluye además queso fresco con 1% de materia grasa, fécula de maíz, almidón modificado y aroma de queso. La segunda variante incluye margarina, almidón de maíz, leche en polvo, leche líquida y aroma de limón. Cocción final a la temperatura de 200ºC durante un tiempo comprendido entre 20 y 45 minutos. Aplicable a la producción a escala industrial de productos de repostería a base de queso y derivados lácteos.
