Abstract
Procedimiento para la fabricación de fases enriquecidas en 1,1-GPM (1-O-D-glucopiranosil-D-manita) y/o en 1,6-GPS (6-O-D-glucopiranosil-D-sorbita), en el que: (i) se disuelve en agua a temperatura elevada la isomaltulosa hidrogenada o una mezcla que contenga isomaltulosa hidrogenada, la solución resultante tiene una concentración del 70 al 90 % en peso de sustancia seca de isomaltulosa hidrogenada o de la mezcla que contiene isomaltulosa hidrogenada, (ii) se efectúa con la solución resultante una cristalización por enfriamiento en un intervalo de temperaturas de 90ºC a 37ºC, en el intervalo de 90 a 65ºC se trabaja con una velocidad de enfriamiento de 5 a 15ºK/h y en el intervalo de 65 a 37ºC se trabaja con una velocidad de enfriamiento de 0,4 a 3ºK/h y (iii) a continuación se separa la fase enriquecida en 1,1-GPM de la fase enriquecida en 1,6-GPS.
