Abstract

Instalación de intercambio de calor para dispositivos calentados con gas para el tratamiento térmico de productos alimenticios, con una rueda de ventilador (6) para la circulación forzada de un medio de tratamiento, con un quemador de gas (18) y con un tubo de intercambio de calor (21) que rodea la rueda de ventilador, estando el quemador (18) en conexión exclusivamente con una instalación de mezcla (17) para gas y aire de la combustión para el ajuste de la mezcla de gas y aire necesaria para la combustión y comprendiendo la instalación de mezcla (17) una instalación de regulación para el ajuste de la mezcla de gas y aire premezclados al 100 % y un soplante, que transporta bajo presión la mezcla de gas y aire al quemador (18) y, una vez realizada la combustión, al tubo de intercambio de calor (21), conectado con el quemador de forma hermética al gas, caracterizada porque el quemador (18) está configurado como un tubo cerrado en el extremo (26) con orificios de salida de gas (27) distribuidos en la periferia, porque una zona inicial, ensanchada en el diámetro, del tubo de intercambio de calor (21) sirve como cámara de combustión (20) para el alojamiento del quemador (18), porque la cámara de combustión (20) está dispuesta esencialmente en dirección tangencial con respecto a la rueda del ventilador (6) en la proximidad inmediata de la misma, y porque el tubo de intercambio de calor (21) rodea la rueda del ventilador (6), partiendo desde la cámara de combustión (20) hasta la salida (25) siempre en una dirección constante de la circulación de gas.
