Procedimiento de pasteurización o de esterilización de productos alimenticiosque consiste esencialmente en combinar un tratamiento de inhibición de las reacciones diastásicas y/o de limitación de la proliferación microbiana y/o fúngicacon una irradiación de dichos productos alimenticios por dósis de radiaciones ionizantes suficientemente pequeñas para evitar alterar la calidad de dichos productos.
