Procedimiento para la decantación de un sedimento, en particular un sedimento de vino (101, 201), en una planta con una centrifugadora sinfín de camisa maciza (8, 18) para la decantación centrífuga (105, 205) del sedimento (101, 201) formando una fase sólida (106, 206) y una fase líquida (107, 207), caracterizado por que antes y/o durante el decantado centrífugo (105, 205) se produce una clarificación (103, 203) del sedimento (101, 201) mediante la adición de al menos un agente clarificador (104, 204).
