Abstract
Procedimiento para la obtención de un complemento nutricional y complemento nutricional.#Se describe un procedimiento para la obtención de un complemento nutricional que comprende la trituración de una matriz vegetal que contiene carotenoides, vitamina C y polifenoles y la modificación de la estructura celular de la matriz vegetal por medios mecánicos. Los medios mecánicos para la modificación de la estructura celular de la matriz celular son ultrasonidos. Se describen complementos nutricionales obtenidos por el citado procedimiento y alimentos funcionales que los contienen. Los complementos nutricionales tienen una mayor biodisponibilidad que los productos vegetales sin tratar.
Description
Asimismo, la capacidad antioxidante también es mayor en un 17% frente al material vegetal sin tratar.
Otra ventaja asociada al proceso de obtención es evitar la deshidratación del material vegetal.
5 En un modo preferente, la matriz vegetal es Capsicum annuum L . En un modo más preferente Capsicum annuum variedad Lamuyo que no contiene capsicinoides.
Para garantizar la estabilidad de los complementos nutricionales, éstos se acondicionan en envases termosellados a vacío y se 10 ultracongelan. Los resultados después de 3 meses de almacenamiento a -80ºC no muestran pérdida en el contenido de vitamina C, carotenoides y polifenoles. Los complementos nutricionales tampoco muestran pérdida de su actividad antioxidante.
15 Principio activo: molécula con actividad biológica: vitamina C, carotenoides, antioxidantes, polifenoles.
Complemento nutricional: composición que comprende diferentes principios activos junto a otros componentes sin actividad biológica: fibra, pigmentos, estabilizantes, azúcares.
20 Alimento funcional: alimento enriquecido con complementos nutricionales: leche, gazpacho, crema, salsa, mermelada.
