Abstract

Procedimiento de transformación de iota-carragenano en alfa-carragenano que comprende la catálisis enzimática de la conversión del motivo iota-carrabiosa en el motivo alfa-carrabiosa por una enzima que tiene una actividad sulfatasa y cuya secuencia peptídica comprende los péptidos de las siguientes secuencias: SEQ ID NO 1, SEQ ID NO 2 y SEQ ID NO 3.
