Abstract

Procedimiento de fabricación de un polvo de leche completa-a partir de leche fresca completa y normalizada teniendo un contenido de lo menos 24% en materia grasa, miscible con agua a 5º C por batido a mano y soluble en esta agua, miscible con agua a 20º C sin batido y que se disuelve en este agua en dos minutos, sin batido, procedimiento que comprende un tratamiento previo al calor, una concentración al vacío, una homogeneización, un secado por pulverización y una aglomeración, caracterizado porque la acción del calor sobre la leche completa dentro de los límites que permiten matar los gérmenes nocivos y destruir los fermentos susceptibles de reducir el tiempo de conservación, sin desnaturalizar, sin embargo, más de 35% de las sustancias protéicas del suero; porque la leche completa concentradas homogeneizada de tal manera que las dimensiones de las partículas de grasa en el polvo de leche completa secada no pasan de 1 micrón; porque el secado por pulverización, la aglomeración,la colocación en embalajes y el almacenaje se hacen en condiciones tales que no hay más de 1% de grasa libre,respecto al total de la materia seca, en el polvo de leche completa y que la lactosa está allí presente en estado amorfo.
