Abstract
Procedimiento para la elaboración automatizada de embutido seco, para ello troceando y mezclando trozos o piezas de carne, así como añadiendo cultivos iniciadores, especias o sustancias similares, caracterizado, porque las piezas o trozos de carne se guían como material de aporte (3) a través de un sistema de transporte accionado independientemente del triturador (5) a la cámara trituradora en función de la capacidad de la o de las trituradoras (5), produciéndose el guiado de modo que se asegure la prevención de un proceso de recalcado, así como de un incremento de la temperatura y con ello el deterioro del material de aporte, utilizándose como trituradora (5) una extrusionadora, en particular en la elaboración de embutido fino una extrusionadora con rodillos, y por otra parte, estando la cámara trituradora separada de la cámara de mezcla, si bien pudiendo estar acopladas, a fin de que en función del producto a procesar, sea posible poder efectuar una transferencia sencilla para distintas trituradoras (5), el material existente con una consistencia poco compacta,cortado en porciones o pesado, llena una bolsa de láminas o se deposita sobre una lámina inferior (8), asimismo disponiéndose encima una lámina superior (10) y se extrae el aire encerrado, el material o la masa de carne (9) adquiere forma en el interior de las láminas impermeables (8, 10), y hasta que se alcance el punto isoeléctrico en el material de procesado, se mantiene sometido a un procesado por compresión, la masa de carne (9) que se encuentra en la lámina (8,10) se somete durante la fase de maduración a un proceso de regulación térmica, a fin de controlar la actividad de los microorganismos responsables del proceso de maduración y porque las barras de masa de carne preformadas (11) se someten a un procesado a alta presión para la inactivación de los microorganismos, y a continuación se extraen del revestimiento de láminas (8, 10), se someten a una etapa de secado final y se prosigue su procesado.
