Abstract
In food casings e.g. as used in the processed meat industry for various types of sausages, hams, beef roles etc, the surface appearance is important and many products require the use of "smoking" to impart a characteristic brown colour. A non-toxic safe and stable smoke coloring agent comprises a reaction product of a reducing sugar and an amino acid or amino acid derivative, coated onto the casing and dried. The reaction mixture may also contain a citrate.
