Abstract

Método de producción de levadura de panadería y similares, caracterizado por partir de una cepa que se selecciona por medio del primero y por lo menos otro test de screening elegidos en un conjunto de test de screening en que no se recurre a ninguna medición de desprendimiento gaseoso, a partir de un conjunto de cepas diploides preparadas previamente o bien por hibridación o bien por mutación de cepas existentes.
