Abstract

Procedimiento para la fabricación de productos alimenticios por maduración y desecación, especialmente salchichón o jamón seco, caracterizado esencialmente por comprender la realización de una fase de secado a estufa en condiciones de temperatura y duración tales como la fermentación láctica sea llevada hasta su terminación, es decir, hasta que el pH haya disminuido al máximo y hasta que haya tenido lugar el consumo completo de las sustancias que alimentan dicha fermentación.
