Abstract

Procedimiento para concentrar por evaporación jugos azucarados en varias etapas de evaporador conectadas una tras otras con evitación de la formación de costras minerales, caracterizado porque el jugo azucarado es evaporado en presencia de hasta 10 ppm, referido al peso del jugo azucarado antes de la entrada en la primera etapa de evaporador, de una mezcla que contiene al menos 3 polímeros tomados el grupo a) polímeros y/o sales de la fórmula I **(Fórmula)** donde R1 significa -H, -OH, -CH3, -CH2OH y/o -C1, R2 significa -CHO, -CH2OH y/o -COOCH2CH2COOH, R3 significa -H, -CH3 y/o -CH2OH, n1 significa 0,5 hasta 0,95, m1 significa 0,05 hasta 0,5, n1+m1 = 1 y P1 significa 6 hasta 300.
