EL PRODUCTO DE PARTIDA SE CORTA EN LONCHAS DE 0,5 A 6 MM DE ESPESOR, CONSTITUYENDO LA FASE COMUNICADORA DE TEXTURA; POR OTRO LADO SE PICA CARNE GRASA ATEMPERADA, CON UN DISPOSITIVO ESCAMADOR, LAS ESCAMAS RESULTANTES SE MEZCLAN CON CLORURO SODICO, AGUA Y AGLUTINANTES, PARA OBTENER UNA FASE COMUNICADORA DE SUCULENCIA FINAMENTE DISPERSA. AMBAS FASES DE MEZCLAN EN UNA PROPORCION DEL 20 AL 90% EN PESO DE FASE COMUNICADORA DE TEXTURA, CON80 A 10% EN PESO DE FASE COMUNICADORA DE SUCULENCIA; LA MEZCLA OBTENIDA ES SOMETIDA A TRATAMIENTO DE ALINEACION Y SE LE DA LA FORMA Y TAMAÑO (LONCHAS DE 1 A 3 MM DE ESPESOR) REQUERIDAS PARA EL CONSUMO.
