SE LLEVA A CABO UTILIZANDO COMO MATERIAL DE PARTIDA: CARNE DE VACA, CERDO U OTROS TIPOS DE CARNE DE MAMIFEROS; TAMBIEN CARNE DE AVES, COMO LA CARNE DE POLLO Y PAVO. EL PRODUCTO DE PARTIDA SE CORTA EN LONCHAS DE 0,5 A 6 MM DE ESPESOR, CONSTITUYENDO LA FASE COMUNICADORA DE TEXTURA; POR OTRO LADO SE PICA CARNE GRASA ATEMPERADA, CON UN DISPOSITIVO ESCAMADOR, LAS ESCAMAS RESULTANTES SE MEZCLAN CON CLORURO SODICO, AGUA Y AGLUTINANTES, PARA OBTENER UNA FASE COMUNICADORA DE SUCULENCIA FINAMENTE DISPERSA.
