Abstract
La présente invention a trait à un fromage fondu stérilisé qui a la texture d'un fromage fondu non stérilisé thermiquement. L'invention se rapporte aussi à un procédé de fabrication d'un tel fromage fondu stérilisé, dans lequel on prépare une masse à fondre, on stérilise cette masse en la fondant à une température supérieure à 120 degrés C, on ramène la masse stérilisée à une température comprise entre 60 et 100 degrés C, puis à cette température on y développe la texture normale d'un fromage fondu par dispersion dans celle-ci d'un agent de texturation constitué pour partie au moins d'une caseïne stérile à l'état natif.
