Abstract

Ce couteau rotatif pour hachoir à viande comprend plusieurs lames à peu près radiales dont chacune présente une arête avant surplombante 30 espacée axialement de la face de portée plane 36 de cette lame, par laquelle elle porte sur la grille de sortie 16 du hachoir. La surface avant de la lame reliant l'arête 30 à la surface de portée plane 36 est plane ou légèrement incurvée et forme à son intersection avec la surface 36 une arête coupante qui coopère avec des perforations de la grille 16. La surface de portée 36 est creusée d'une rainure radiale qui délimite une deuxième arête tranchante et est principalement destinée à recueillir les particules d'os en évitant ainsi que ces particules ne traversent les perforations de la grille 16.
