Abstract

Fabrication de fructose et de sirops à base de fructose et moyens pour effectuer cette fabrication. Le procédé comprend l'opération de mise en contact d'une solution de glucose avec un micro-organisme du genre Streptomyces sp. et plus particulièrement avec des souches NRRL 11 120 et NRRL 11 121 telles que désignées par le Northern Regional Research Center, US Department of Agriculture, Peoria, Il1. Utilisation de ce procédé pour fabriquer du fructose à partir du glucose.
