Abstract

L'invention concerne un granulé de levure produit par extrusion et granulation de levure humide, ces opérations étant suivies éventuellement d'un séchage. La surface de ce granulé est rendue rugueuse et agrandie par l'introduction d'un gaz sous pression, en particulier d'air, dans la levure humide se trouvant dans l'extrudeuse. Application à la boulangerie.
