Abstract

Le lait concentré par ultrafiltration constitue un pré-fromage liquide qui est versé dans un moule dans lequel il se transforme en un fromage solide. Le caillage du pré-fromage est effectué en deux temps, un premier temps au cours duquel on utilise un moule provisoire dans lequel on verse la dose désirée de lait concentré, où se produit la prise de caillé, et dans lequel il demeure quelques minutes, ce moule provisoire étant agencé pour que l'extraction du caillé puisse en être faite de façon totale et sans difficulté, et un deuxième temps au cours duquel on utilise un moule définitif, classique pour la fabrication de tels fromages à partir du caillé, dans lequel on verse le caillé pris provenant du moule provisoire et on l'y laisse durcir. On peut utiliser les mêmes moules provisoires pour fabriquer des fromages de formes et tailles différentes, et des moules classiques comme moules définitifs.
