Abstract

L'invention propose un dispositif de refroidissement ou de surgélation par jets impactants constitué d'un tunnel (1) comprenant un tapis mobile (2), au moins une plaque et préférentiellement au moins deux plaques (3) situées parallèlement de part et d'autre dudit tapis mobile (2), l'une au moins, de préférence les deux, étant dotée(s) d'orifices traversants (4), et au moins un moyen de soufflage d'un fluide froid (8 et 9), ledit tunnel (1) comprenant une zone sous pression P1 (5) et une zone sous pression P2 (7), la pression P1 étant supérieure à la pression P2, caractérisé en ce qu'il comprend des moyens pour faire varier la pression dans la zone sous pression P1 et/ou des moyens de refroidissement et de maintien de la température de la ou des plaques à une température inférieure à environ - 80 degres C, de préférence inférieure à -90 degres C et plus préférentiellement inférieure encore à -100 degres C, et un procédé de refroidissement ou de surgélation par jets impactants de produits alimentaires.
