Dispositif de pressurage pour raisins, destiné à coopérer avec une cuve et comportant : -- un premier plateau (24) présentant une première face, ou face supérieure, et une seconde face opposée à la première face, ou face inférieure, ledit premier plateau (24) présentant un contour adapté à la forme de la cuve, - un second plateau (26) perforé disposé en vis-à-vis de la seconde face du premier plateau et présentant un contour de second plateau adapté à l’intérieur de la cuve, - des moyens de liaisons mécanique entre le premier plateau et le second plateau perforé, et - des moyens d’entrainement permettant de déplacer par translation le second plateau vers le premier plateau.Système de vinification mettant en œuvre un tel dispositif de pressurage.
