Abstract
Γαλακτικά βακτήρια (Lactobacillus plantarum και Lactobacillus pentosus) που έχουν απομονωθεί από τη χλωρίδα της ελιάς στην Ελλάδα και διαθέτουν προβιοτικές ιδιότητες, χρησιμοποιούνται ως εκκινητήριες καλλιέργειες στη ζύμωση των επιτραπέζιων ελιών για την παραγωγή νέων λειτουργικών προϊόντων με υψηλή προστιθέμενη αξία και όφελος για την υγεία των καταναλωτών.
