Abstract

Dispositivo di misura dell'umidità per forni, in particolare forni di cottura a convezione forzata degli alimenti, comprendenti una camera di cottura (8), un'ulteriore camera (10) per un ventilatore di raffreddamento, separata dalla precedente da una parete divisoria (9).Dispositivo comprendente un corpo metallico (13) buon conduttore di calore, passante attraverso la parete divisoria (9) ed introdotto con le sue estremità (17, 18) rispettivamente nella camera di cottura (8) e nella camera separata (10).Sono previsti un elemento dissipatore di calore (19, 28, 32) collegato con l'estremità (18) del corpo metallico (13) e tre sensori di temperatura (21, 22, 26), atti a misurare rispettivamente le temperature delle due estremità (17, 18) e della camera di cottura (8). Tali sensori sono inoltre collegati con un microprocessore (25), per fornirgli indicazioni delle temperature misurate, in modo che detto microprocessore (25) determini il tenore d'umidità dell'aria nel forno al raggiungimento della temperatura di condensazione del vapore acqueo nell'estremità (17) di detto corpo metallico.
