Abstract
Alimento dietetico sotto forma di biscotto a elevato contenuto di fibre alimentari e a ridotto contenuto calorico comprendente i seguenti ingredienti nelle gamme di percentuali in peso indicate:Farina di frumento 40-60% Miele 0,1-2%Zucchero a velo 10-l6% Bicarbonato di ammonio 1% circa Olio vegetale raffinato 10-16% Sale fino 0,2-1%Glucomannano 5-25% Bicarbonato di sodio 0,2-0,5%Farina di mais 5-10% Aromi 0,3-0,6%e inoltre acqua aggiunta nella proporzione di 11 Kg. per ogni 100 Kg. Il procedimento prevede le operazioni di:a) mescolare intimamente a parte il glucomannano e l'olio vegetale; b) impastare insieme gli altri ingredienti; c) amalgamare la miscela di glucomannano e olio vegetale nell'impasto; d) comprimere l'impasto finale nelle normali forme portate da rulli impiegate per modellare biscotti; e) depositare le forme ottenute su di un nastro trasportatore che attraversa più camere di cottura con temperature crescenti da 130°C a 180°C.
